Today I'm sharing the break-fast that I've been OBSESSED with lately. Introducing my chocolate chip protein pancake/waffle! You can use this recipe to make either pancakes or waffles - just switch up the cooking method!
Chocolate Chip Protein Pancakes/Waffles ????????????
Ingredients:
2 scoops Autumn's Vanilla Protein Powder
1 egg
1/2 banana, mashed
1 tsp. vanilla extract
1-2 Tbsp. zero added sugar chocolate chips (I like to use stevia sweetened)
Coconut/avocado oil spray
Optional toppings:
1/4 cup homemade heavy whipping cream
OR
1/2 cup unsweetened greek yogurt

1. Berry Yogurt Bowl
Serves 1
Ingredients
200-300g almond milk yogurt
1 tsp matcha
Toppings
Strawberries
Raspberries
Blueberries
Mango
Granola
Method
1. Mix together matcha and yogurt until evenly combined
2. Top with berries and mango! You could also add granola or seeds too
2. Avocado Bagel
Ingredients
Serves 2
1 bagel sliced
1 avocado
Salt and pepper to season
2 poached eggs
Chilli flakes
Method
1. Toast the bagel
2. Mash avocado and add salt and pepper
3. Top the bagel with avocado, poached eggs and top with chilli flakes
3. Cinnamon Apple Porridge
Ingredients
Serves 2
2 apples, 1 diced and 1 grated
1 tsp coconut oil
1 Tbsp brown sugar
1 tsp ground cinnamon
80g oats
700ml oat milk (or use mixture of milk and water)
2 Tbsp milled flax
1 tsp vanilla extract
1 Tbsp maple syrup
Topping
Pumpkin seeds
Method
1. Add coconut oil to a pan and then add in the diced apple and cook for a few minutes until soft.
2. Then add in brown sugar and ground cinnamon and cook for a few more minutes.
3. Set the apples aside and in the same pan add in oats, oat milk, vanilla extract, grated apple, milled flax and maple syrup and cook for 5-10 minutes until thickened.
4. Divide the porridge into two bowls and top with the apple mixture and pumpkin seeds.
4. Berry Breakfast Smoothie
Ingredients
Serves 1
2 handfuls of frozen raspberries
1 frozen banana
1 tbsp milled flax
2 tbsp oats
1 scoop vanilla protein powder
300ml milk (I used oat)
Method
1. Place all the ingredients in a blender and blend until completely smooth.
5. Banana Pancakes
Ingredients
Serves 2
1 banana
125g oats
250ml milk (I used oat)
1/2 tsp baking powder
Coconut oil or butter to grease the pan
Toppings
Berries
Maple Syrup
Method
1. Place all the ingredients in a blender and blend until smooth
2. Heat a non stick pan with a little of coconut oil or butter and then scoop the pancake. I use around 1/4 cup per pancake.
3. Cook pancakes on both sides until golden brown and then serve with you favourite toppings.
