How To make Simple Souvlaki
FOR THE SOUVLAKI:
12 oz Lean ground lamb
2 Garlic cloves
- peeled and crushed 4 tb Minced onion
1/2 ts Dried oregano
1/2 ts Dried basil
1/4 ts Crushed rosemary
1/4 ts Thyme leaves
1 pn Ground red pepper
3 tb Fresh lemon juice
2 tb Vegetable oil
Salt; to taste 4 Pitas
- wrapped in foil and warmed 1 c Shredded lettuce
FOR THE SAUCE:
1 Garlic clove
- peeled and minced 1/3 c Diced tomato
1/3 c Diced cucumber; peeled,
- seeded and chopped 2 tb Fresh chopped mint
1 tb Fresh lemon juice
3/4 c Plain yogurt
COMBINE THE LAMB with the garlic, onion, oregano, basil, rosemary, thyme, red pepper, lemon juice and salt and mix just until blended. Form the lamb into 12 meatballs. In a large skillet, heat the oil until hot and almost smoking. Add the meatballs and saute over medium-high heat until cooked through, about 3 minutes per side. Drain the lamb balls well. Combine the garlic, tomato, cucumber, mint, lemon juice and yogurt in a small bowl. Cut open 1 end of each warmed pita, fill with shredded lettuce and 3 meatballs. Spoon the sauce over the meatballs and serve.

Chicken souvlaki is one of the most popular street foods in Greece and for good reason. It tastes like heaven! Souvlaki stands for “meat-on-a-skewer”, however the majority of Greeks and especially those from Athens call any type of pita wrapped meat a souvlaki, specifying the type of meat and method of roasting separately. For example Souvlaki with chicken gyros or Souvlaki with pork skewers etc.
The most important step in making the perfect traditional Greek chicken souvlaki is nothing else but the marinade! For this traditional chicken souvlaki recipe, the chicken is first marinated to soak up all the wonderful Mediterranean flavours and then grilled to high temperature, to get all crunchy, nicely coloured and juicy. Select some good quality chicken breasts and season with a selection of Greek spices like oregano, coat with extra virgin olive oil and lemon juice and flavour with garlic. Marinading your chicken souvlaki in the fridge for at least half an hour will allow the aromas to infuse the souvlaki and give it the desired flavours. Enjoy!

4 boneless chicken breasts (approx. 1 kg/35 ounces)
4 tbsps olive oil
juice of 1 lemon
1 clove of garlic, minced
2 tbsp dried oregano
salt and freshly ground pepper

8-9 wooden skewers

Pork Souvlaki - Easy Recipe
Hi everyone. Today we have pork souvlaki. In my opinion pork makes the best souvlaki.
In the video you’ll notice I don’t marinate the meat with wet ingredients, if I was using tenderloin as I sometimes do, I would marinate it.
But for the pork belly version I don’t.
Perfect for a bbq too.
These are so tasty, tuck them in a pitwith tzatziki and tomatoes. Serve on a bed of of my bougouri, bulgar wheat pilaf. So versatile and so delicious. Enjoy :)
