Make the Perfect Roast Beef with Garlic Gravy - Guaranteed to be a HIT at your next dinner party!
I love a Sunday roast of beef, but I have to have it perfectly done. I've gone through many methods of cooking roasts, but this has to been one of the best fail proof methods I've ever come across. It works perfectly every time.
In this video we show how to cook this perfect roast beef done to medium rare. The process is straight forward, simple, and fair proof. First, seasoning the beef, on all sides, with a combination of of spices such as thyme, rosemary, garlic, salt, and pepper. Then, coat the roast with olive and then rub the spices into all sides. Another note is to make sure the meat be at room temperature, so I leave mine out for about 4 to 6 hours.
Next, place the vegetables of your choice into the bottom of the roasting pan. The roast is placed on the top baking tray. Put the roast and vegetables into a 500 degree F or 260 degrees C preheated oven for 5 minutes per pound. My roast was about 2.2 pounds, so I left it about 13 minutes or so. After about 13 minutes, the heat is turned off and the roast is left in the oven to bake for 15 minutes per pound. It is very important not to open the oven door at all. In the case of this roast, I left it for 35 - 40 minutes, pulled it out, and allowed it to rest for an additional 15 minutes.
While the roast is resting, we demonstrate how to make a fantastic garlic gravy.

Parmesan Potato Stacks Recipe
This easy recipe for Parmesan potato stacks makes a great side dish or appetizer that your family and guests will definitely enjoy. They are very flavorful due to the thyme, garlic and parmesan which I always love to pair when cooking potatoes. If you don’t like thyme feel free to use any other herbs you prefer like rosemary, oregano or basil.

Ingredients
Makes about 4-6 servings
3 tbsp (45g) butter, melted
2 tbsp (25g) Parmesan cheese
1 tsp (3g) garlic powder
1 tsp thyme leaves
salt and freshly ground black pepper
8-10 gold potatoes (1.4 kg) sliced thin (about 1/16 inch -1.6 mm thick)
1. Preheat the oven to 375°F (190C). Butter 12 muffin cups and set aside. Cut the potatoes into thin slices, preferably using a mandoline.
2. Place potato slices into a large bowl. Add melted butter, Parmesan cheese, thyme, garlic, salt and pepper. Toss to coat evenly.
3. Layer the potato slices into stacks and place in the prepared muffin cups. Sprinkle some freshly ground black pepper.
4. Bake until the edges and tops are golden brown and the centers are tender, 55 minutes to 1 hour.
5. Remove from the oven, let them rest for 5 minutes then remove from pan and garnish with parmesan cheese and thyme.

So delicious, easy to make, healthy options for dinner!

Sweet and Sour Meatballs (recipe below)
Creamy Italian Chicken Noodle Soup (
Baked Potato Soup (
Baked Beans (see below)
White Chicken Chili (
Sweet and Sour Meatballs:
-3/4 cup Brown Sugar
-3 TBSP Corn Starch
-¼ cup Vinegar
-3 TBSP Soy Sauce or coconut aminos
-1 Package of Frozen Meatballs
Directions:
Put all ingredients in freezer bag and place in the freezer. Place into the crockpot and cook on low for 6-8.
BBQ Baked Beans
- 6 pieces Bacon cooked and crumbled
- 2 cans great northern beans drained and rinsed
- 1 cup brown sugar
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp chili powder
- 3TBSP Ketchup
- 1 TBSP stone ground mustard
- 3 TBSP maple syrup
- 1 TBSP vinegar (white or ACV)
- 1 TBSP bacon grease
Combine all in a crock pot and cook on low for 6-8 hours or high 3-4.
