How To make Shrimp and Eggplant Casserole
1 c Onions,chopped
1 c Green bell pepper,chopped
1 c Celery,chopped
4 c Eggplant,peeled,diced(1lb)
2 ea Garlic cloves,crushed
2 T Butter or margarine
1 lb Shrimp,shelled/deveined
2 c Rice,cooked
1 T Worcestershire sauce
2 t Salt
1/2 t Black pepper
1/2 t Thyme
3/4 c Mayonnaise
1 c Bread crumbs,buttered,soft
1. In large skillet, cook onions, bell pepper, celery, eggplant and
garlic in butter until vegetables are crisp-tender. 2. Stir in remaining ingredients except bread crumbs; turn mixture into lightly buttered shallow 2-quart casserole and top with bread crumbs. 3. Bake in preheated 350'F. oven 45 minutes.

Copycat Don's Seafood Stuffed Eggplants
Ingredients:
3 Large Eggplants( Split in half and scoop out and boil the pulp)
1 Cup White Onion ( Chopped)
½ cup Celery (Chopped)
½ Cup Green Onions ( Chopped)
¼ Cup Parsley ( Chopped)
1 Stick Unsalted Butter
12 Saltine Crackers (Crushed)
2 Large Eggs
1 LB Lump Crab – Gulf Coast Preferred
1LB 60-70 Count Shrimp – Gulf Coast Preferred
Tony's New Salt Free Creole Seasoning 2018. Or other Cajun Seasoning to taste.
¼ Cup Italian Bread Crumbs
Salt to Taste
Instructions:
1. Add the stick of butter to a pan and cook the Onions, Celery & Shrimp until Onions are translucent.
2. Mix the eggs and crackers in a separate bowl.
3. Stir in the Shrimp, Onion, Celery and then add the parsley & green onions.
4. Fold in the Lump Crab Meat slowly.
5. Add the boiled Eggplant Pulp. Season with Creole or Cajun Seasoning to your liking.
6. Salt to your taste.
7. Use a Spoon with holes in it and scoop the stuffing into the eggplant shells.
8. Sprinkle with the Italian Bread Crumbs.
9. Bake at 350 ° for 20-25 Minutes!

This Eggplant Casserole Recipe is made by cooking down cubed and peeled eggplant and mixing with ground meat, shrimp, crawfish or crabmeat. We serve it i s a side dish or as a party dip on crackers.
Eggplant Casserole Recipe Ingredients
4 Eggplants
2 cups Cajun Trinity (or frozen seasoning blend)
1 stick of butter or 2-3 tablespoons canola oil
1/2 pound ground round
1/2 pound ground pork (or one pound of either one)
Tony’s Creole Seasoning
2 cups bread crumbs
1-2 cups chicken stock
Eggplant Casserole Recipe Cooking Directions
Preheat oven to 375 degrees.
Spray a casserole dish with spray oil.
First start by peeling the eggplant.
Cut in half and then cut into strips. Then, cut crosswise into 1 inch cubes.
Heat in a large pot about 2 cups chicken stock.
Place in the pot the cubed eggplant.
Season with salt and a sprinkle of Tony’s Creole Seasoning.
Let simmer for 15 minutes.
Stir occasionally.
Once tender, mash with a whisk or a potato masher to get the lumpy pieces.
Meanwhile, heat 1 stick of butter on medium heat in a deep skillet.
Cook the ground round beef and ground pork by chopping up with a flat edged wooden spatula.
The meat should all be brown and no pink.
Pour the meat mixture into the eggplant pot. Stir well.
Then, add in 1 cup of bread crumbs.
Stir to mix all ingredients evenly.
Add seasoning if needed.
Pour into casserole dish and sprinkle with another cup of bread crumbs.
An optional step would be to also sprinkle on Parmesan cheese.
Place in the oven and bake for 30 minutes.
Eggplant Casserole Recipe Serving Suggestions
Serve as a side dish in a small bowl or serve with a good butter cracker or whole wheat cracker for a party.
Eggplant Casserole Recipe Other Options
Replace ground meat with boiled or sautéed shrimp, crawfish, or crab meat.
The seafood really makes for a tasty party dip.

Baked Eggplant and Shrimp Casserole Recipe
Hello! Today I put together an easy dish for dinner. This eggplant casserole came out so yummy! Keep reading below for a full list of ingredients!
Ingredients:
Olive oil (or cooking oil of your choice)
(2) eggplants
(1/2) onion, chopped
(2) red bell peppers, chopped
(1/2 tsp) curry
(1/2 tsp) thyme
(1/2 tsp) cayenne pepper
(1/2 tsp) salt
(1/2 tsp) black pepper
(1/2 tsp) maggi
(1 bunch) scallions
(2-3 lbs) cooked shrimp
(1 pkg) mozarella cheese
(1/4 cup) black olives
(1/2 tsp) soy sauce
Directions:
1. Cut eggplants into even sized pieces.
2. Add eggplants to a bowl of salt water and soak for 5 minutes.
3. After soaking, pat dry with a paper towel and transfer to a baking dish.
4. Bake at 400 degrees Fahrenheit for 10 minutes.
5. Add olive oil, onions, and red bell peppers to a pan and cook on medium heat.
6. Stir in 1/2 teaspoon each of curry, thyme, cayenne pepper, salt, black pepper, and maggi.
7. Add in scallions.
8. Add in cooked shrimp.
9. Cook down for 10-15 minutes.
10. Cut fresh mozarella into even sized pieces.
11. In a baking dish, layer chopped eggplant, cooked shrimp medley, and mozarella cheese.
12. Add in black olives.
(Optional) add in 1/2 teaspoon of soy sauce
13. Continue to layer until all ingredients are used.
14. Bake at 400 degrees Fahrenheit for 10-12 minutes. Allow dish to cool before serving.
Serve and enjoy!
