Cooking with Kenshin1913: Pigna Bread
In this episode, my mom and myself make Pigna Bread or Easter Bread or as we call it Obean.
Ingredients
4 Cups of Flour
2 Packages of Yeast
1/2 Cup of Sugar
3 Eggs (room temp)
3 Tbs Crisco (room temp)
Pinch of Salt
Topping
Confectioner's Sugar
Milk or water
Sprinkles

Chocolate Chip Pumpkin Cheesecake Muffins
Chocolate Chip Pumpkin Cheesecake Muffins
This is a three-step process and if you go through it step by step you will end up with a successful muffin. This style of muffin can also be made using chocolate cake and leaving off the crumb topping.
Crumb Topping
1/3 cup brown sugar
1 tsp cinnamon
¼ cup melted butter
2/3 cup of flour
Cream Cheese Filling
1 egg yolk
½ tsp vanilla
3 TBSPS white sugar
6 oz cream cheese
Muffin Mix
Dry Ingredients together:
1 ¾ cup flour
1 tsp Baking powder
1 tsp baking soda
½ tsp salt
2 tsp cinnamon
1 tsp pumpkin pie spice
½ cup white sugar
½ cup brown sugar
Wet mix
2 large eggs
1 tsp vanilla
1/3 cup milk
½ cup vegetable oil
1 cup pumpkin puree
½ cup mini chocolate chips
Make a well in the dry ingredients and pour in the wet ingredients. Stir until just about all of the flour has disappeared and then add the chocolate chips and finish mixing just until you cannot see any more flour.
Using a scoop or tablespoon fill cupcake liners almost half full. Add a teaspoon of Cream cheese mix to the center of each muffin. Add another scoop of muffin mix to the top of each muffin and smooth to the edge with a spoon until all of the cream cheese mixture is covered. Add crumb topping to each muffin.
Bake in a preheated 425-degree oven for 5 minutes and then turn down the temperature to 350 degrees and cook for another 17 minutes. Cool in the pan 10 – 20 minutes before moving to a cooling rack. Pat yourself on the back, this was a tricky one.
