Old Fashioned Fudge
With just a few ingredients and a little time you will be able to make that fresh Old Fashioned Fudge that you find at those speciality stores. This video is made for the professional as well as the beginer. Enjoy making and sharing this.
2 cups Sugar
½ cup Cocoa (Unsweetened)
1 cup Milk
¼ cup Butter
1 teaspoon Vanilla
Combine sugar, cocoa, and milk. Cover until the sides and top sweat causing all the sugar molecules to wash down the sides of the pot. Remove the top and continue to cook until the mixture reaches softball 224-238 degrees. Take it low and slow (Low Heat and Slow in time). Do not stir the mixture. Stirring will cause the mixture to crystallize. If it crystallizes remove from the heat and washout the pot and start over.
Once the fudge has reached the desired temperature poor into a mixer with a paddle attachment.
Start mixing on slow as the mixture is very hot.
As it cools turn the speed up to medium.
Let mix unit the mixture reaches 110 degrees and add the butter and the vanilla.
Keep mixing until the temperature reaches 80-85 degrees.
Turn out on to the counter/Stone/Parchment.
Kneed to shape and smooth.
Let cool to room temperature and wrap.
Serve with a smile!

Old Fashioned Chocolate Fudge
Chocolate fudge has always been one of my favorite holiday treats, in fact, I have even been known to make it year around. In this tabletop episode, I’ll show you how to make creamy, smooth, old-fashioned chocolate fudge that can only be described as little chocolate squares of happiness. Another great thing about fudge is it ships really well, and it’s one of the staple treats I would send overseas successfully!
Notes:
Recipe:
Ingredients
3 cups white sugar
¾ cups butter
2/3 cup evaporated milk (5 oz. can)
1 package semi-sweet chocolate chips
1 jar marshmallow crème (7 oz.)
1 tsp. vanilla extract
Directions:
Grease 9 X 9 pan
Mix sugar, butter, and evaporated milk in large, heavy-bottomed saucepan over medium heat stirring constantly. Bring mixture to a full rolling boil.
Continue to stir until candy thermometer reaches 235-240 degrees (soft ball stage), approximately 4-5 minutes.
Remove from heat. Stir in chocolate chips until melted. Mix in marshmallow crème and vanilla until smooth. Pour chocolate mixture into prepared pan and let cool until set. Cut into squares in enjoy.

In this episode of In The Kitchen With Matt, I will show you how to make traditional fudge. This creamy old fashioned fudge recipe is so yummy. If you are a homemade fudge lover like me you have got to try this. I love all kinds of fudge, 3-ingredient microwave fudge, peanut butter fudge, cookies, and cream fudge, etc. My aunt gave this recipe to my mom in 1968, and I remember helping her make it when I was young. It is similar to a fantasy fudge. We always had it around the holidays. Creamy old fashioned fudge is more finicky than microwave fudge, but it tastes better to most people. If I can do it, you can do it. Let's get started and make some fudge from scratch!

1/2 cup of butter, salted or unsalted (113g)
1 cup mini-marshmallows or 10 large marshmallows (50 to 60g)
2/3 cup of evaporated milk (158ml)
1 cup semi-sweet chocolate chips (or use milk or dark chocolate) (170g)
1 tsp. vanilla extract (5ml)
1 cup chopped walnuts (117g) (optional)
