How To make Scout's Brownies
1 c Butter, sweet
3 1/2 oz Chocolate, unsweetened
3 T Cocoa, dark unsweetened
1 1/2 c Flour, all-purpose
1/2 ts Baking powdere
1 ts Salt
4 Eggs
2 c Sugar
1 ts Vanilla extract
1 c Chocolate chips
Preheat oven to 350 F. Melt butter with unsweetened chocolate in the top of a double boiler, stirring occasionally. Set aside to cool. Sift together the cocoa, flour, baking powder and salt. Beat eggs until creamy, then gradually add sugar, beating constantly. Add vanilla and cooled chocolate-butter mixture. Stir in dry ingredients just until combined. Spread batter in buttered 9" x 13" pan. Sprinkle chips over surface. Bake for 30 to 35 minutes, or until center no longer jiggles when shaken. Fudgy Thin Mint Brownies | How To Make Girl Scout Thin Mint Brownies
Today we are making fudgy thin mint brownies. These mint brownies are made from Girl Scout Thin Mint Cookies. This time of year we always over but thin mint cookies and this recipe was a perfect way to utilize Thin Mints into fudgy brownies. Enjoy!

Fudgy Mint Chocolate Brownies
Ingredients
3/4 cup unsalted butter
one 4 ounce (113g) semi-sweet chocolate bar, coarsely chopped*
2 cups granulated sugar*
3 large eggs, at room temperature
2 teaspoons pure vanilla extract
1 cup unsweetened natural or dutch-process cocoa powder*
1 cup all-purpose flour
1 teaspoon salt
1 sleeve crushed Thin Mint cookies
1 1/4 cups mint chips
Instructions
Preheat the oven to 350°F (177°C) and grease a 9×13 inch pan or line with aluminum foil or parchment paper,
In a microwave-safe bowl, combine the butter and 2 ounces of chopped chocolate. Melt in 30 second increments, whisking after each, until completely smooth.
Whisk in the sugar until completely combined, then whisk in the eggs and vanilla.
Add the cocoa powder, flour, salt, remaining 2 ounces of chopped chocolate and the chocolate chips. Batter will be very thick. Spread evenly into prepared pan.
Bake for 30-32 minutes
Remove from the oven and place on a wire rack to cool completely in the pan before cutting into squares.
Cover and store leftover brownies at room temperature for up to 1 week.
