How To make Scotch Pancakes
1/4 lb Plain white household flour
1 ts Bicarbonate of soda
1 1/2 ts Cream of tartare
1 oz Caster sugar
1 Egg
1/4 pt Milk or cream
Sift the flour with the raising agents and stir in the sugar. Make a well in the centre and break the egg into it. Whisk the milk into the egg, then gradually incorporate the dry ingredients to make a very smooth, thick batter. Alternately, simply mix everything together in a food processor. If time permits let the batter stand for 30 minutes before cooking. Heat a griddle, bakestone or cast-iron frying pan until very hot - or cook direct on the hot plate of an Aga. Grease your chosen surface lightly with buttered paper, using just enough fat to prevent the pancakes from sticking. Using a large metal spoon held point downward, drop a few small rounds of batter on to the hot surface. Space them well apart. Cook over steady heat until bubbles rise to the surface and the underside of the pancakes are browned - about 2 minutes. Loosen them gently with a palette knife, then flip them over and cook for about 1 minute longer. Makes about 16 pancakes. Source: Philippa Davenport in "Country Living" (British),

FLUFFY PANCAKE RECIPE
Ingredients
1½ Cups | 190g Flour
4 Teaspoons Baking Powder
Pinch of Salt
2 Tablespoons Sugar (optional)
1 Egg
1¼ Cups | 310ml Milk
¼ Cup | 60g Melted Butter + more for cooking
½ Teaspoon Vanilla Essence
Instructions
In a large bowl mix together the flour, baking powder and salt with a wooden spoon. Set to the side.
In a smaller bowl crack in the egg and pour in the milk.
Add the melted butter and vanilla essence to the egg and milk and use a fork to mix together until everything is well combined.
Make a well in the dry ingredients and pour in the wet. Fold the batter together with a wooden spoon until there are no longer any large lumps.
To cook the pancakes heat a heavy based pan like cast iron over medium low heat. When the pan is hot add a small amount of butter and ⅓ cup of the pancakes batter.
Cook the pancake for 2-3 minutes each side. Repeat with remaining batter.
Serve the pancakes stacked high with butter and maple syrup. Enjoy.
Notes
You can add other flavourings to the pancakes such as blueberries or chocolate chips. Add the extra ingredients at the same time as you combine the wet and dry ingredients.

Lizzie shows is how to make Scotch Pancakes. Similar to American pancakes, Scotch pancakes differ in the way they are eaten. They are normally eaten place of toast, and make a yummy breakfast, toasted with butter! Or even served cold with jam and butter at 'tea time'! You will need 120g self-raising flour
small pinch salt
30g caster sugar
1 egg
1/4 pint milk.
Double these measurements up to make a bigger batch!

Happy Pancake Day everyone! to celebrate Shrove Tuesday we had pancakes for breakfast. (Truth be told we have pancakes for breakfast a lot!!) So I thought I would share my recipe for Scottish pancakes (or drop scones as they are sometimes called!) with you all! I hope you enjoy! x

Scotch Pancakes
For breakfast, brunch, lunch or an after dinner treat, Scotch Pancakes are an absolute favourite in the Mellow Yellow Kitchen. Also known as drop scones, this recipe creates a really thick batter that holds its shape when you ‘drop’ it into the frying pan. These little pancakes are lovely and fluffy and absolutely delicious with your favourite topping. Try golden syrup and banana, chocolate and berries, crispy bacon and maple syrup or simply butter and jam.
This recipe uses Mellow Yellow Rapeseed Oil which is low in saturated fat and high in Omega 3, making this recipe ideal for a healthy and balanced diet.
