Today we're making a classic Italian beans and greens soup. I used escarole, but you could easily sub spinach or kale if escarole proves too hard to find. I hope you enjoy this escarole and beans soup!

ESCAROLE AND BEANS SOUP PRINT RECIPE:
Ingredients
¼ cup (54g) olive oil
4 ounces (114g) pancetta - diced
3 ribs celery - diced
1 medium onion - diced
3 cloves garlic - sliced
2 medium Russet potatoes - peeled and cut into small cubes
1 pound (454g) dried cannellini beans soaked overnight, or 3 16-ounce cans
1 head escarole - washed and chopped
6 cups low sodium chicken stock - plus more to thin as needed
salt and pepper - to taste
1 small Parmigiano Reggiano rind - optional
½ cup Parmigiano Reggiano for serving

This is a soup i actually created 1-15 years ago for a few of my neighbors that chapped to Hispanic and some didn't eat pork
So i created a bean soup with a Latin flare and has all beef
Its very easy to make cause its all done in a crock pot or instant pot (on slow cooker setting)
You also can cook on top of the stove for a faster result,but the low ans slow crock pot /slow cooker method is best cause it allows the flavors to marry together for hours
RECIPE:
1# Pinto beans(you actually can use any bean you like or multiple types)
8 cups water
2 ea Anaheim pepper(seeded and sliced)
1 ea sweet onion(large diced)
3 stalks celery(large diced)
6 small sweet pepper(seeded and sliced)
4 ea taqueria style bone in beef shanks
1# beef hot links or beef smoked sausage(sliced)
2 tsp salt and pepper
2 tsp chopped garlic
2 tsp cavenders Greek seasoning
2 tablespoons chicken bullion powder base
DIRECTIONS:
Add beans to pot
Add meat to pot
Add water to pot
Add peppers,onions and celery
Add spices and garlic
Add last cup of water and cover with lid
Place instant pot setting on slow cook and let cook for 8 hours on HIGH setting
Enjoy with tortillas or cornbread

Simply delicious. YES it contains a lot of sodium, but it is so delicious, that a treat once in a blue moon is well deserved!
This recipe is sort of free flowing, without any measurements, unfortunately.
You base it around the size of the pot you want in the end. We usually use something like
2-3 ham hocks
About 1-2 cups of leftover ham from Christmas
Onions to your taste (usually 1-2)
1 bay leaf
Cover with water and let it cook for 2 hours.
Add 1 portuguese sausage (or chorizo)
3 cans of bean soup
3 carrots cut into bite sized pieces
3 potatoes cut into 1 inch pieces
Cook until the veggies are tender, about 20 minutes.

Best Bean Soup Recipe ...easy and delicious
This is my favorite bean soup recipe. It's super tasty and easy to make; especially if you're a kid...kids love beans right? I generally use cannellini and black beans in this recipe, but you can use whatever beans you want. Sometimes I use great northern beans instead of cannellini. Ham or sausage is great in bean soup, too, and it doesn't have to be a lot; just a little meat adds great flavor to bean soup. If going meat free, be sure to add lots of spice and maybe an extra veggie or two...beans need all the excitement they can get.

Bean Soup Recipe Ingredients:
2 15oz cans CANNELLINI BEANS
1 15oz can BLACK BEANS
2 medium sized ONIONS chopped
4-5 cloves GARLIC finely chopped
some leftover SAUSAGE or HAM (cooked)
32 oz BROTH (or ½ water ½ broth)
a little HALF AND HALF if you want
1 tsp CHIPOTLE POWDER
(or use some other kinda heat)
SALT and PEPPER to taste
chopped PARSLEY if you want
Bean Soup Recipe Directions:
Heat 1 to 2 Tbsp of oil in a soup pot.
Add the onion and garlic and saute for several minutes.
If you've got fresh chili or jalapeno peppers, dice and add a little of that, too...if you want.
Add seasoning. I use salt, pepper, and chipotle powder in this recipe. Chipotle is awesome in bean soup. It adds great flavor
and a little heat. Don't have chipotle powder? Add chili powder or chili/garlic paste instead, or anything you like, soup is all about
improvising.
Cook the spices and onions together for a few minutes and then add broth (meat or veggie broth, whatever, dude).
Toss in a bay leaf and bring the pot to a bubble.
Add in beans. I like to use a mix of cannellini and black beans.
If you have some sausage or ham on hand, chop and toss a little into the soup.
Reduce the heat down to a low simmer, cover and let cook 30-45 minutes.
After simmering, remove the bay leaf.
Use a hand blender to blend the soup to desired consistency.
I like to add a little half and half for added creaminess; not a lot, just a little does the trick, around ½ a cup.
Turn off the heat and stir in a little chopped parsley or cilantro, and that's it!
If you can make it a day ahead, all the better; soup only gets tastier with time!
