Easy Black Bean Soup Recipe
This warm and cozy Black Bean Soup recipe comes together in less than an hour. It’s a simple and healthy soup that uses everyday kitchen ingredients, so you can easily whip it up for dinner. You won’t believe how flavorful this soup is, and it’ll quickly become a family favorite.

Vegan potato, corn, bean chowder (Instant Pot)
This recipe is vegan, gluten free, soy free and nut free. It is a very hearty meal, so no additional sides are needed, but it does pair nicely with some cornbread and a salad!
Ingredients:
2 cups veggie broth
2.5t minced garlic
3/4 cup finely chopped onion
1 cup chopped red bell pepper
1 to 1.5 cups organic corn
1.5 cups cooked white beans or 1 can of drained and rinsed white beans
1.5 cups cooked chickpeas or 1 can of drained and rinsed chickpeas
3 cups small cubed yellow potatoes
8 oz non-dairy cream cheese (I recommend Kite Hill brand)
Seasonings:
2T dried oregano
1T dried basil
2t garlic powder
1/2t black pepper
Optional toppings: sliced jalapenos, green onions, hot sauce, cracked pepper
1. Turn your IP onto saute mode as you prep your ingredients
2. Once heated, saute your onions and garlic for a couple minutes. Use a splash of water when the onions start to stick. No oil is necessary.
3. Add veggie broth, red bell pepper, seasonings and ONLY 4 oz of the cream cheese. Mix well.
4. Seal the lid, make sure pressure valve is sealed. Set for 3 minutes.
5. Open IP and add additional 4 oz of cream cheese, corn, white beans and chickpeas. Stir until cream cheese is thoroughly incorporated. Seal lid again and let sit at least 5 minutes. This will heat the additional ingredients.
6. Open lid when ready to serve!
The link below gives directions for cooking it stove top if you don't own an Instant Pot. In my opinion, it makes it easier and you can walk away from the kitchen as it cooks.

The wife and I are always on the look out for great food to make our own. This is one of those we discovered while out to eat that took us a little time but we got nailed down and we believe improved on it. It is always fun when you are able to discover something at a restaurant and break it down and recreate it with your own little twist on it. So go ahead and try this Poblano Corn Chowder it will be one of your new favorite soups.

Makes: 6-8 Servings
6 Poblano Peppers
3 Tbsp. Butter
2 Onions, Diced
2 Ribs Celery, Diced
1 Garlic Clove, Minced
2 Medium Yukon Gold Potatoes, Peeled & Chunked
4 Ears of Corn (roughly 4 Cups)
5 Cups Chicken Stock
Salt
1 tsp. Crushed Bay Leaves
1 tsp. Cumin
1/2 tsp. Oregano
1 Cup Heavy Cream
Black Pepper
2 Tbsp. Lime Juice

This recipe is a walkthrough of how we make our homemade corn chowder. You could easily swap somethings out and make all kinds of varieties of different chowders.

Corn Chowder
1-2 Tsp of Vegetable oil
1 medium onion
3-4 cloves of garlic
8-10 medium-sized potatoes
1 can of Spam
1 pack of bacon
1/2 gallon of milk
2 cans of cream corn
2 cans of sweet corn cornels
salt, pepper, and tabasco to taste.
1. Get all vegetables and meats prepared and cut.
onion cubed, garlic minced, spam cubed and bacon cut into strips.
2. Heat oil in a pan and add in onion and garlic.
3. When the onion is translucent add in spam and bacon. Fry until meat is cooked.
4. In a separate pot heat up your milk on medium-high heat.
5. Add your cooked meat and onion mixture into your milk and cook for 15 minutes stirring constantly.
6. add in your cans of corn and creamed corn.
7. Season to taste.
8. Simmer for 10 minutes and serve.
Best served hot.
We chose to serve this chowder with tuna sandwiches. They just go so well together!

This is an amazing salad, perfect side dish, dip or full meal. There is no doubt that this salad is on top of my list when barbecuing, grilling burgers or when I need a potluck dish because it's always a hit, i use it as a garnish in our meat tacos or a a topping in our burgers. My Ron always asks for it. When entertaining friends i like to set out an assortment of chips and serve it as an appetizer dip, then I watch it disappear quickly. If you're a vegetarian, and looking for a perfect meal this is it, just leave out the cheese and your set, you can make the perfect lettuce tacos, always crunchy and delicious. It's always best when eaten the same day, or your avocado can turn brown, this BLACK BEAN AND CORN SALAD, is easy to make and it's loaded with nutrients.
INGREDIENTS
3 ears of corn
1 Tbsp salt (for boiling corn)
2 Cans black beans (drained and rinsed)
1/2 med purple onion (diced)
1/2 large orange bell pepper (diced)
1 pint cherry tomatoes (cut in half)
1 Large jalapeño (seeds removed and diced fine)
1 large garlic clove (finely minced)
zest of 1 lime
med/large bunch chopped cilantro
COTIJA cheese 1/3 10oz. package (crumbled)
1/2 -3/4 C. Zesty Italian dressing
1 large avocado (cubed)
salt to your liking
• you can leave out the cheese if vegetarian
• best if eaten the same day
