Recipe
Makes over 3 dozen cookies
Ingredients
2 large eggs
125 mL (1/2 cup) 2% milk
125 mL (1/2 cup) sparkling water
12 g (1Tbsp) granulated sugar
5 mL (1 mL) vanilla extract
150 g (1 cup) all-purpose flour
pinch ground nutmeg
pinch salt
1.5 L (6 cups) vegetable oil, for frying
icing sugar, for dusting
Directions
1. Whisk the eggs, milk, sparkling water, sugar and vanilla in a mixing bowl. Whisk in the flour, nutmeg and salt.
2. Heat the oil to 350 °F (180 °C). Have ready a baking tray lined with paper towel a bamboo skewer and a slotted spoon or spider (strainer with a long handle.).
3. Heat a rosette iron in the oil for a few seconds and then dip into the batter, taking care not to have the batter come up over the top of the iron. Submerge the iron into the oil and let cook for about 30 seconds, then, use the tip of the skewer to loosen the rosette off of the iron. Let the rosette cook for another 30 seconds, until golden brown and remove with the slotted spoon onto the baking tray to drain and cool. Repeat, being sure to keep the iron hot before dipping into the batter. Once you get started, you’ll develop a rhythm and be able to have a few rosettes cooking at once.
4. Once cooled, generously dust the rosettes with icing sugar.
The rosettes are best enjoyed the day they are made.

Scandinavian fried goodness, it's time for some Rosettes! (12 Cookies of Christmas - Recipe 4)
Recipe: Light and crispy, the 12 Cookies of Christmas is well on it's way with today's recipe for Rosettes! My friend Angelica joins me today to show us how to make these delicious Scandinavian cookies. You'll need a couple special tools to make them and a little patience (as you will see), but the results are amazing!

INGREDIENTS
Set 1
4 T. butter, melted
Set 2
1 c. flour
2.5 T. sugar
¼ t. salt
¾ c. whole milk
1 egg
1.5 t. vanilla
Set 3
Vegetable oil for deep frying
2 c. sugar for dusting
¼ c. cinnamon for dusting
Tools: blender, frying thermometer , rosette irons, large / deep pot, napkins for draining oil, wire
cooling racks, wax paper, container for dusting, tong, fork, container wide and deep enough for the irons

Deep Fried Cookies? Scandinavian Rosette Cookies | Swedish Rosettes!
Deep Fried Cookies! Today we are making a traditional Christmas Cookie! The Scandinavian Rosette Cookies! Some people also call these a Swedish Rosette, or a Norwegian Rosette! All of those names are correct! This is a traditional, simple deep fried cookie! To make these cookies you will need a Rosette Iron! I have listed a few of them below. We bought a set from Nordic Ware. Don't let this recipe scare you! This was our FIRST time attempting to make these cookies, and everything turned out perfect!
Ingredients:
2 eggs
2 tsp Sugar (yes I know I said one in the video)
1 Cup Milk
1 Cup Flour
1/4 Salt
1 Tablespoon Lemon Extract
Vegetable Oil for frying
Powdered Sugar for decorating
Directions:
Lightly beat egg, stir in sugar, milk, and lemon extract. Sift together flour and salt, and add to mix. Lightly mix until creamy. Oil should be 325 degrees Fahrenheit. Dip iron into oil, and get it hot. Then dip it into the batter, but do not go all the way down, don't cover the top of the iron. Dip in oil until it finishes bubbling. Place on tray. Let cool, cover in powdered sugar. ENJOY!
