This traditional holiday cookie always brings back memories for me.

I highly recommend using a cooking thermometer for this recipe. It's the best way to gauge the temperature of your oil. Here's a link where you can purchase one:
It's best to make the batter a few hours or the day before you make the cookies. You want your batter to be well chilled before you start.
Ingredients:
1-1/4 cups of flour
1 cup of milk
2 eggs
1/4 tsp of salt
1 TBS of sugar
1 TBS of vanilla extract (you can also use other extracts for different flavors)
Oil for frying
mix your ingredients, chill the batter and make sure your oil is at a constant 360 - 370 degrees for best results
drain on paper towels, let cool, the top with powdered sugar

Ingredients:
200g rice flour
100g egg (about 2x60g egg)
100g fine granulated sugar
150g coconut milk
100g water
½ tsp salt

Chinese Pretzel Recipe
Ingredients:
Cooking oil of choice
2 eggs
1 tablespoon sugar
¼ teaspoon salt
1 cup milk
1 cup flour
2 teaspoons vanilla extract
Directions:
1. Set a pot of oil over medium high heat and heat to 375F. Set the chinese pretzel iron in the oil to heat up.
2. To a medium bowl add eggs, sugar, and salt. Whisk until well combined.
3. Then add flour and milk and mix until well combined.
.4. Next stir in vanilla until just combined.
5. Remove the iron from the oil and dab on a paper towel to remove excess oil. Dip the hot iron into the pretzel batter until the batter is about ¾ up the iron. Be sure not to cover the iron completely.
6. Then place the iron back in the oil. After a few seconds the batter will release from the iron. You can help it along with a pair of tongs to slide it off the iron. Fry for 1-2 minutes on each side or until golden brown.
7. Remove from the oil and place on a paper towel to drain excess oil. Allow to cool completely and ENJOY.
8. Optional: Top with powdered sugar or a chocolate drizzle.
