How To make Rock Cakes
2 c All-purpose flour
2 ts Baking powder
pn Salt 1/2 ts Ground nutmeg
1/4 ts Ground cinnamon
1/4 ts Ground cloves
1/4 c Cold butter, cut in
-small pieces 1/4 c Solid vegetable shortening,
-cut in pieces 1/3 c Raisins (plumped)
1/3 c Chopped walnuts
2/3 c Packed light brown sugar
Grated peel of one lemon 1 Egg, lightly beaten
1 tb To 2T milk
A staple at English boarding schools, these individual cakes are served with afternoon tea. They don't keep well; after a day they take on the characteristics of "rocks". Preheat oven to 400F (205C). Grease a large baking sheet; set aside. Sift flour, baking powder, salt, nutmeg, cinnamon and cloves into a large bowl. With your fingers, rub in butter and shortening until mixture is crumbly. Stir in raisins, walnuts, brown sugar, and lemon peel. Add egg and just enough milk to make a stiff dough. Drop tablespoonfuls of dough 2 inches apart on baking sheet. Bake 12 to 15 minutes or until golden brown. Transfer to a wire rack to cool. Serve fresh. Makes about 15 rock cakes.

2 1/2 cups all purpose flour
1 1/2 cups grated coconut
2 eggs
1/4 - 1/2 cup milk flour absorbs different depending on the brand so start with 1/4 cup milk and add more if needed.
5 tbsp butter
2/3 cup sugar
2 tsp baking powder
1 1/2 tsp cinnamon
1 tbsp Vanilla extract
1 tsp nutmeg
1/3 cup Chopped cherries
1/3 cup Chopped raisens

INGREDIENTS -
200g self raising flour
100g butter
75g light brown soft sugar
1 large egg
200g sultanas or raisins
You can use butter to grease the muffin tin or use a non-stick cooking spray which can be found in most supermarkets or cake decorating suppliers - Butter works just as good :)

Rock cakes (rubbing in method)
A quick recipe, using the rubbing in method. This recipe makes 6. I chose cherries and raisins as my filling choice.
Ingredients:
125g self-raising flour
45g caster sugar
45g margarine
¼ tsp. mixed spice
½ egg
60g of your chosen rock filling; raisins, chocolate chips, sugar strands, cherries
Method:
Preheat oven to 200˚C and flour a baking tray
Weigh margarine and flour into a mixing bowl and rub margarine into flour using fingertips until it resembles breadcrumbs
Add the sugar, chosen filling and mixed spice and stir
Add beaten egg to mixture and mix it together with a butter knife.
Stick your hand in and squeeze the mixture collecting all bits in the bowl to form a ball shape
Form your 6 equal sized rocky moon shapes
Bake in the oven for approx. 12-15 mins
