How To make Pumpkin Doughnuts
2 Eggs -- beaten
1 c Sugar
2 tb Oil
1/2 c Buttermilk
1 c Pumpkin, canned
4 c Flour
2 ts Salt
4 ts Baking powder
1/2 ts Baking soda
1 t Nutmeg
1/2 ts Cinnamon
1/4 ts Ground ginger
Sugar for coating
Beat eggs and sugar until light and fluffy. Add oil, pumpkin and buttermilk. Mix dry ingredients together and add to egg mixture. Chill 1 hour. Turn out on floured board and roll to 1/2 inch thickness. Cut with a doughnut cutter. Deep fry (375-degrees) until brown on one side. Turn over. Brown other side. Drain well on paper towels and roll in sugar. Recipe By :

Donuts:
2 cups all-purpose flour

1/2 teaspoon salt

1 cup pumpkin puree
1/2 cup brown sugar
1/4 cup butter, at room temperature
2 eggs
2 tablespoons milk
1 teaspoon vanilla extract
Maple-Cinnamon Glaze:
1 1/2 cups powdered sugar
2 tablespoons milk
1/2 teaspoon maple extract
1/2 teaspoon cinnamon

Baked Pumpkin Doughnuts written recipe
Ingredients
2 cups all purpose flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons pumpkin pie spice
1/4 cup unsalted butter, softened
1/2 cup brown sugar
1 large egg
1/2 cup canned pumpkin puree
1/3 cup milk
cinnamon icing:
1/2 cup powdered sugar
1/4 teaspoon ground cinnamon
1 tablespoon milk
Preparation
1. Preheat oven to 375 F.
2. Combine the first 5 ingredients in a bowl and set aside.
3. In a standing mixer or bowl using a hand mixer, cream the butter and brown sugar.
4. Add the egg, the pumpkin puree and milk.
5. Add the flour mixture and mix until just combined.
6. Place the dough in a large zipper bag, seal the bag airtight and then cut off ½ inch of one corner.
7. Pipe the dough into a doughnut pan. Bake for 15 minutes and allow to cool.
8. To make the icing, place all of the ingredients in a bowl and whisk to combine.
9. Drizzle icing over each doughnut and serve.

This is a sticky dough! Kneading is what helps it come together. Do not be tempted to add extra flour.
If you’re kneading by hand, watch this video:
For the dough:
❥ 210ml warm whole milk
❥ 2 1/2 tbsps granulated sugar
❥ 15ml vanilla extract
❥ 6g instant yeast
❥ 1 egg 1 egg yolk, room temperature
❥ 375g all purpose flour
❥ 55g unsalted room temperature
butter, cubed
For the filling:
❥ 115g room temperature cubed cream cheese
❥ 80g pure pumpkin purée, room temperature
❥ 80g granulated sugar
❥ 100g COLD heavy cream (35%)
❥ 1 tsp cinnamon
For the cinnamon sugar:
❥ 1 cup granulated sugar
❥ 1 tsp ground cinnamon
