4 lb Small mushrooms 4 c Boiling water 1 1/2 tb Salt
marinade:
1 3/4 c Water 15 Peppercorns 2 Bay leaves 2 1/2 tb Salt 3/4 c Sugar 3/4 c Vinegar Cut the mushroom stems off at the cap level. Place the heads in boiling salted water. Simmer till they sink to the bottom. Strain. Boil marinade water with peppercorns and bay leaves for 30 minutes. Add salt and sugar. Stir till dissolved. Add the vinegar, bring to a boil. Place the mushrooms in small jars. Cover with hot marinade. Close the jars. Keep refrigerated. Use for canapes and salads, or as appetizers. Yields 4 1 fluid pint jars.

7 lbs small whole mushrooms 1/2 cup bottled lemon juice 2 cups olive or salad oil 2-1/2 cups white vinegar (5 percent) 1 tbsp oregano leaves 1 tbsp dried basil leaves 1 tbsp canning or pickling salt 1/2 cup finely chopped onions 1/4 cup diced pimento 2 cloves garlic, cut in quarters 25 black peppercorns Yield: About 9 half-pints
Please read Using Boiling Water Canners before beginning. If this is your first time canning, it is recommended that you read Principles of Home Canning.
Procedure: Select very fresh unopened mushrooms with caps less than 1-1/4 inch in diameter. Wash. Cut stems, leaving 1/4 inch attached to cap. Add lemon juice and water to cover. Bring to boil. Simmer 5 minutes. Drain mushrooms. Mix olive oil, vinegar, oregano, basil, and salt in a saucepan. Stir in onions and pimento and heat to boiling. Place 1/4 garlic clove and 2-3 peppercorns in a half-pint jar. Fill jars with mushrooms and hot, well-mixed oil/vinegar solution, leaving 1/2-inch headspace.
Adjust lids and process according to the recommendations in Table 1.

Here's how to make at home delicious mushrooms in olive oil!INGREDIENTS
1kg mushrooms
500ml white vinegar
Whole black pepper
Salt
Garlic
Bay leaf
1l water
Paprika
Parsley
Mint
Seed oil
METHOD
Cut a part of the stem of each mushroom. Wash and strain them.
Cut each mushroom in four vertically.
Pour water and vinegar into a pot. Add pepper and a bay leaf. Wait for it to boil. Add salt and then cook the mushrooms for 3 minutes.
Strain the mushrooms and dry them with kitchen paper.
Place the mushrooms in a bowl, add chili powder, finely chopped garlic, mint, parsley, salt, pepper and mix well.
Fill a glass jar with the mushrooms and fill with oil.
