Kitchen of Enders: Sweet and Sour Green Beans
A side dish that goes with just about everything!! Enjoy!
Ingredients:
2 lbs. fresh green beans
3 strips bacon, chopped
1/2 c. granulated sugar
1/2 c. red wine vinegar (or rice vinegar)
Instructions:
In a large stock pot, have water boiling on stove, ready once green beans are prepped.
Wash green beans, and trim off ends. Once completed, place beans into boiling water.
While beans are boiling, fill a large bowl with ice and water. Set aside.
Boil green beans for 7-8 minutes, until vibrant in color and tender.
Drain beans, and immediately place into ice bath.
In original pan, over medium heat, cook bacon until done, but not too crispy.
Add vinegar, scraping fond off bottom of pan.
Add sugar, mix well. Bring to strong simmer, and allow to simmer until syrup thickens.
Drain beans from ice bath, be sure there are no ice cubes in the green beans.
Add beans into pot with syrup. Toss to coat, and allow green beans to reheat, if necessary.

Hello everyone. Today I am sharing how to blanch green beans to freeze and how to make honey sweetened pickled beets. The garden produce is in full swing and what better way to use this produce than to preserve it for winter months.

Pickled Beets:
20-30 med. beets
3 cups apple cider vinegar
3 cups water
6 whole cloves
1/4 cup honey
1 cinnamon stick
6 washed pint size jars, lids & rings
1. Cut tops off beets and wash.
2. Fill pot with water and bring to a boil. Add beets and boil for about 30 minutes or until tender.
3. Remove from water and place in cold water until easy enough to handle.
4. Remove skin and cut into slices or chunks. Place into jars.
5. Put the other ingredients into a pot and bring to a boil for about 3 minutes.
6. Pour liquid into jars about 1/2 inch from rim.
7. Place lids and rings on jars and process in a hot water bath or large stock pot for 30 minutes.
8. Remove and listen for the sealing sound.

Easy Crisp Pickled Green Beans Recipe
Ingredients:
2 1/2 pounds fresh green beans
2 1/2 cups distilled white vinegar
2 cups water
1/4 cup salt
1 clove garlic, peeled
1 bunch fresh dill weed
3/4 teaspoon red pepper flakes (optional)
Directions:
Sterilize 6 (1/2 pint) jars with rings and lids and keep hot. Trim green beans to 1/4 inch shorter than your jars.
In a large saucepan, stir together the vinegar, water and salt. Add garlic and bring to a rolling boil over high heat. In each jar, place 1 sprig of dill and 1/8 teaspoon of red pepper flakes. Pack green beans into the jars so they are standing on their ends.
Ladle the boiling brine into the jars, filling to within 1/4 inch of the tops. Discard garlic. Seal jars with lids and rings. Place in a hot water bath so they are covered by 1 inch of water. Simmer but do not boil for 10 minutes to process. Cool to room temperature. Test jars for a good seal by pressing on the center of the lid. It should not move. Refrigerate any jars that do not seal properly. Let pickles ferment for 2 to 3 weeks before eating.

This recipe is easy to make, and it'll leave you feeling satisfied and full. Plus, it's perfect for meal prepping or just keeping in the fridge for when you're craving a quick and easy meal. If you're a fan of beans, then you need to try this recipe!
Ingredients:
1 lb. Large Dried Lima Beans (Soak overnight!)
1 large Smoked Turkey Leg or Ham Shank
8 - 9 cups Chicken Stock or Broth, can use 2 tbsp of either Better than Turkey or Chicken Bouillon
Salt and Pepper to taste
How to Hot Flash Beans
Clean and sort your beans.
Rinse in a colander with cold water. Add the beans to a large pot and cover them with about 2 inches of water. Bring the water to a boil over high heat, leave the pot uncovered and cook the beans for about 5 minutes. Remove pot from the heat and soak the beans. Let the beans soak in the hot water for 1 hour. Drain the beans into a colander, rinse and then cook according to your this recipe. Enjoy!
