How To make Persimmon Cookies
3/4 c Sugar
1/2 c Butter or margerine
2 Eggs
1 c Strained persimmon pulp
1/2 c Coconut
1 c Chopped walnuts
1/2 ts Lemon extract
1 ts Cinnamon
1/2 ts Allspice
2 c Flour
1 ts Soda
1/2 ts Baking powder
Cream sugar and butter together. Add eggs and persimmon pulp. Mix well. Add walnuts, coconut, lemon extract, and spices. Sift together flour, soda, and baking powder. Add to mixture. Drop by teaspoons full onto greased and floured cookie sheet. Bake at 350 degrees F for 15 - 20 minutes. Notes: I do not use the coconut or the lemon extract, since I do not normally have these things around, and I have never floured a cookie sheet. They turned out fine. -----

Ingredients
1/2 cup (113 g) butter , softened
1 cup (200 g) granulated sugar
1 egg
1 teaspoon (5 ml) baking soda
1 cup (260 g) ripe persimmon pulp (about 1-2 very ripe persimmons)
2 cups (250 g) all-purpose flour
1/2 teaspoon (2.5 ml) kosher salt or sea salt
1/2 teaspoon (2.5 ml) ground cinnamon
1/4 teaspoon (1.25 ml) ground nutmeg
1/4 teaspoon (1.25 ml) ground clove
1 cup (120 g) chopped toasted nuts (walnuts or pecans are our favorite choices)
1 cup (145 g) raisins or dried cranberries

How to bake Persimmon Bread
This delicious bread is made with ripe persimmons for a sweet flavor. Spices such cinnamon, nutmeg, clove, and allspice add extra flavor. The bread is moist and easy to make. My favorite way to eat bread like this is topped with cream cheese, a cup of coffee to one side.
