How To make Penne with Peppers and Sausage
1 lb Sausage, Italian, in 2"
-lengths 2 Onions, purple, in 1 inch
-pieces 5 Garlic cloves, crushed
2 Peppers, bell, red, in 1"
-cubes 2 Peppers, bell, yellow, in 1"
-cubes 16 oz Tomatoes, Italian, plum
3/4 c Wine, red, dry, robust
1 ts Worcestershire
2 Bay leaves, imported
1/2 ts Basil, dried, leaves
1/2 ts Thyme, dried, leaves
1/2 ts Oregano, dried, leaves
1/2 ts Sage, dried, rubbed
1/4 ts Chile, dried, hot, red,
-flakes 1/4 ts Pepper, black, freshly
-ground 3 tb Parsley, chopped
1 lb Penne
Heat a skillet over moderate heat, add sausage and cook until browned. Remove sausage and drain on paper toweling. Discard all but 1 tablespoons of fat. Add onion to fat in skillet and cook slowly until soft but not browned. Add garlic and cook a minute or two more. Add red and yellow bell peppers and toss to coat with oil. Add tomatoes, wine, Worcestershire and seasonings. Cook at a simmer, covered, stirring occasionally, for about 10 minutes, adding sausage pieces toward the end of that period. Uncover and cook over high heat to reduce to desired consistency. In the meantime, cook penne until al dente in ample boiling salted water. Drain pasta and toss in a heated bowl with a tablespoon or so of good olive oil. Serve pasta in heated bowls with sauce and a sprinkling of parsley.

BAKED PENNE WITH SAUSAGE & PEPPERS: Recipe
Recipe:
Ingredients:
½ Box Wheat Penne Pasta
1 Red Bell Pepper (chopped)
1 package Chicken Italian Sausage (cut into ½ inch pieces)
1 jar Heart Smart Spaghetti Sauce
½ teaspoon Minced Garlic
1 Tablespoon Italian Seasoning
2 Tablespoon Low Fat/Skim Ricotta Cheese
1 cup Mozzarella Cheese Low-Fat
Salt for cooking Pasta
Instructions:
Preheat oven 350 degrees. Cook penne pasta according to directions on the box. While pasta is cooking sauté bell pepper and add sausage; cook for 5 minutes. Once peppers and sausage is done; add spaghetti sauce, garlic, and Italian seasoning. Cook for about another 5 minutes. Once pasta is drained add the sauce mixture and Ricotta Cheese; mix well. Pour into baking dish; top with mozzarella cheese. Bake for about 13-15 minutes.
Makes 2-4 servings.
If you don't want to make it a 'healthier' dish, use regular penne pasta, Italian sausage, spaghetti sauce, and ricotta cheese... as well as much more mozzarella cheese.

8 oz gluten free penne pasta
1 lb of Italian sausage
1 red pepper, chopped
1 green pepper, chopped
1 onion, chopped
15 oz can of crushed tomatoes
2 tbsp of Olive oil
2 cloves of garlic, sliced
¼ cup red wine
¼ cup cream, optional
1 tsp thyme or Italian seasoning
Salt, Pepper and Crushed red pepper to your own tastes
Spicy Sausage with Penne Pasta and Vodka Sauce
Looking for something with a kick? Try this non-traditional version of Vodka Sauce. If you don't like spicy, simply take out the peppers and cayenne. Sorry about my voice in this video, couldn't seem to get my throat clear. Recipe and Instructions below.
Ingredients:
3 Tbsp Olive Oil
1 Medium to Large Onion chopped
4 Garlic cloves minced
2/3 Cup Vodka
3 Large Tomatoes
8oz Tomato Sauce
2 tsp Balsamic Vinegar
1/4 Chopped fresh basil
8oz half and half or heavy cream
2 Chopped serrano peppers
5 sliced mushrooms
1 Tbsp Butter
1/2 Cup grated parmesan cheese
16oz Penne Pasta
1 Large 3 pepper sausage link of your choice
1 tsp Cayenne
1 tsp crushed red pepper
Salt and Pepper to taste
Instructions:
Heat olive oil in a large frying pan over medium heat. Add onion and serrano peppers. Let cook for 4 minutes then add garlic, crushed red pepper and cayenne. Cook an additional 60 seconds. Add tomatoes and vodka and cook for 5 minutes stirring occasionally. Add tomato sauce, vodka, salt and pepper. Let simmer for 20 minutes.
Add penne pasta to boiling salted water and let cook for 12-14 minutes. Drain and set aside for now.
Add your sausage to a new frying pan or cast iron over medium heat and cook until crispy on each side. About 5-7 minutes per side. Remove from heat and set aside. Using the same pan, melt butter and add your mushrooms. Let cook 7-10 minutes.
Transfer your tomato sauce to the food processor or blender. Add fresh basil. Pulse and puree until smooth. Leave sitting for now.
Cut your sausage to bite size portions. Add to the mushrooms and cook an additional 2-4 minutes to get the sausage crispy. Add the tomato puree to the pan and mix. Add half and half and parmesan cheese and mix. Mix in the pasta and make sure all pasta is covered with sauce.
Your ready to eat! Add cheese and basil to your liking.
