Sichuan hot chili oil is really easy to make, anyone in the world can do it.
You can use it to make the sichuan spicy chicken, beef, pork. Put it on top of the noodles. Dip it with dumplings, wonton. There are so many possibilities you can do. So I hope you can give this a try =)

**INGREDIENTS**
-3 ounces of chili flake by volume [Amazon Link:
-3/4 cup of Peanut/Vegetable/Soybean oil
-1 tsp of salt
-1/4 cup of crush peanut (optional)
-1 tbsp of sesame seed (optional)
-1 piece of dry cinnamon(optional)
-2 pieces of star anise (optional)
-2 cloves of garlic (optional)
**HOW TO MAKE**
- Combine 3 ounces of chili flake,1 tsp of salt, 1 tbsp of sesame seed, and 1/4 cup of crush peanut together..
- Heat up 3/4 cup of oil with 1 piece of dry cinnamon(optional), 2 pieces of star anise (optional), 2 cloves of garlic (optional). Until all the spices change color.
- Then pour it into the saucepan, make sure when you pour in batches to check see if it is burning too much, if not you pour the rest in!
- Let it cool down. Transfer it to a jar. It can last 2 months at room temp. 6 months in the fridge.

Udon noodles at home (chili peanut sauce recipe)
Today we are making udon noodles at home with a spicy and flavorful chili peanut sauce. You can use store bought noodles to make this a quick easy weeknight meal that can be thrown together in minutes. But making your own udon is worth all the effort and then some. I will show you my techniques for rolling and cutting the noodles. This peanut sauce recipe is super quick and easy. It uses any peanut butter you like and combines it with asian flavors of korean red chili flakes (gochukaru), soy, sesame oil and vinegar. Enjoy!
Noodle ingredients:
400 g flour (bread flour or all purpose flour)
200 mL water
8 g salt
Sauce ingredients:
3 tbsp peanut butter
1 tbsp gochukaru - Korean red chili flakes
1 tbsp brown sugar
1 tbsp soy sauce
1 tsp toasted sesame oil
3 tbsp water plus more noodle cooking water to finish the noodle dish
