Quick and Easy Pasta With Cherry Tomato Sauce
This is the fastest, easiest way to make pasta sauce from scratch. The secret is using cherry tomatoes. Cherry tomatoes are almost always sweeter, riper, and higher in pectin than larger tomatoes at the supermarket. All of these factors means that cherry tomatoes are fantastic for making a rich, thick, flavorful sauce. Even better: it only takes four ingredients and about 10 minutes start to finish - less time than it takes to cook the pasta you're gonna serve it with.
RECIPE:
INGREDIENTS
1 pound dry pasta
Kosher salt
4 medium cloves garlic, thinly sliced
6 tablespoons extra-virgin olive oil, divided
1 1/2 pounds cherry tomatoes (about 2 pints; 750g)
1 ounce fresh basil leaves, roughly chopped (about 1 cup; 30g)
Freshly ground black pepper
Parmesan cheese, for serving
DIRECTIONS
1. Place pasta in a large skillet or sauté pan and cover with water and a big pinch of salt. Bring to a boil over high heat, stirring occasionally. Boil until just shy of al dente, about 1 minute less than the package instructions.
2. Meanwhile, heat the garlic and 4 tablespoons olive over in a 12-inch skillet over medium heat, stirring frequently, until garlic is softened but not browned, about 3 minutes. Add tomatoes and cook, stirring, until tomatoes begin to burst. You can help them along by pressing on them with the back of a wooden spoon as they soften.
3. Continue to cook until sauce is rich and creamy, about 5 minutes longer. Stir in basil and season to taste with salt and pepper.
4. When pasta is cooked, drain, reserving a cup of pasta water. Add pasta to sauce and increase heat to medium-high. Cook, stirring and tossing constantly, and adding pasta water as necessary to adjust consistency to a nice, creamy flow. Remove from heat, stir in remaining olive oil, and grate in a generous shower of Parmesan cheese. Serve immediately, passing extra Parmesan at the table.

Pasta, a delicious dish that has travelled far & wide to become a favourite to many of us, no matter where we are from. A versatile dish that can be made in a million ways to our liking. This recipe is a family favourite in my home, a big hit in my Son’s School & at Birthday parties.
Every one of us have our own style & recipe in preparing pasta. I would like to share my recipe & method, I hope it helps you. This recipe is easy to prepare, delicious to taste, can be made way ahead & easy to prepare for a crowd.
This recipe is made with an Indian twist, we add onions, curry powder & garam masala. The original Pasta dish has great flavours, this recipe adds a different (in a nice way) flavour to the pasta as a whole.
Tomato puree is prepared ahead by boiling tomatoes in salted water & then pureed & set aside. The creamy tomato sauce is made with crushed chopped garlic sautéed in butter which gives a sweet garlic aroma along with finely chopped onions which are sautéed to bring out its sweetness, dry oregano is added so that we do not miss on the original pasta flavour. After which we add *curry powder & *garam masala powder which gives the Indian twist. Then the tomato puree is added & is simmered for a few minutes which makes all the ingredients blend well together & gives a beautiful fragrant thick red sauce. Then the pasta is cooked, drained & we add the sauce to the pasta, finally we finish off by adding fresh cream to bring it all together which makes the sauce & pasta deliciously creamy & not to mention “Yumm……”

The Pasta tastes great when served hot, room temperature or cold & they make great leftovers too. You can also use this recipe as a base & build on it by adding your favourite veggies or roasted chicken pieces etc.

Spaghetti with Tomato Cream Sauce
Serves 4-5

Ingredients:
-Tamatar (Tomatoes) 3-4 medium
-Boiling water as required
-Makhan (Butter) 1 tbs
-Lehsan (Garlic) chopped 1 tbs
-Chicken boneless cubes 250 gms
-Paprika powder ½ tsp
-Namak (Salt) 1/2 tsp or to taste
-Kali mirch powder (Black pepper powder) ½ tsp
-Makhan (Butter) 2 tbs
-Lehsan (Garlic) chopped 1 & ½ tbs
-Pyaz (Onion) chopped 1 medium
-Kali mirch (Black pepper) crushed 1 tsp
-Namak (Salt) 1/2 tsp or to taste
-Chicken stock cube 1
-Fresh parsley chopped 1 tbs
-Doodh (Milk) 1 Cup
-Cream 1/4 Cup
-Cheddar cheese grated 1/2 cup
-Spaghetti 250 gms (boiled as per pack’s instruction)
-Fresh parsley chopped
Directions:
-Cut tomatoes slightly with the help if the knife.
-In boiling water,add tomatoes and blanch for 3 minutes then remove skin.
-In blender jar,add blanched tomatoes and blend to make a puree & set aside.
-In wok,add butter and let it melt.
-Add garlic and mix well.
-Add chicken boneless cubes and mix well until changes color.
-Add paprika powder,salt,black pepper powder and mix well.
-Cover and cook on low flame for 12-15 minutes then cook on high flame until dries up & take out in a bowl.
-In the same wok,add butter and let it melt.
-Add garlic and mix well.
-Add onion,mix well and sauté until translucent.
-Now add tomato puree and mix well,cover and cook on low flame for 5 minutes.
-Add black pepper crushed,salt,chicken stock cube and mix well.
-Add fresh parsley and mix well.
-Add milk,cream and whisk well.
-Add half quantity of cooked chicken and mix well.
-Add cheddar cheese,mix well and cook for 2-3 minutes.
-Add boiled spaghetti and give it a good mix.
-Add fresh parsley.
-In serving dish,add creamy tomato spaghetti,cooked chicken,fresh parsley & serve!

-Lehsan dal ker ache tarhan mix karein.
-Chicken boneless cubes dal dein aur rang tabdeel hunay tak ache tarhan mix ker lein.
-Paprika powder,namak aur kali mirch powder dal ker ache tarhan mix karein.
-Dhak dein aur halki ancch per 12-15 minutes kliya paka lein phir tez ancch per sukh janay tak paka lein aur bowl mein nikal lein.
-Us he karhai mein makhan dal ker melt ker lein.
-Lehsan dal ker ache tarhan mix karein.
-Pyaz dal ker mix karein aur translucent huany tak sauté ker lein.
-Tamatar puree dal ker ache tarhan mix karein aur dhak ker halki ancch per 5 minutes kliya paka lein.
