How To make Pasta Mexicali
8 oz Penne or Mostaccioli
-OR Rotini, uncooked 16 oz Canned black beans
rinsed and drained 16 oz Canned cannellini beans
:
rinsed and drained 11 oz Canned yellow corn kernels
-- drained 1 c Chopped red onion
1/2 c Minced red bell pepper
1/4 c Chopped fresh cilantro
-(or more, if desired) 1/2 c Chopped fresh parsley -- OR..
2 tb -Dried parsley
1/4 c Cider vinegar
1 tb Dijon mustard
2 Garlic cloves -- minced
1 1/2 ts Ground cumin
1/2 ts Cayenne pepper (optional)
1/2 ts Black pepper
1/4 c Vegetable oil
Prepare pasta according package directions; drain. In a large bowl, combine pasta, beans, corn, onion, bell pepper, cilantro and parsley. In a separate bowl, combine vinegar, Dijon mustard, garlic, cumin, cayenne and black pepper. Slowly whisk oil into vinegar mixture. Add vinegar mixture to pasta and stir well. Serve well chilled. Each serving provides: 424 Calories; 17.3 g Protein; 71 g Carbohydrates; 9 g Fat; 0 mg Cholesterol; 559 mg

Receta de la Autentica Salsa de Tomate Italiana
No te pierdas esta fantástica salsa de tomate al estilo italiano. Esta salsa de tomate básica italiana es lo suficientemente densa y sabrosa para poder usarse para hacer lasagnas,pizzas y para dips (por ejemplo para palitos fritos de queso mozzarella).
Ingredientes:
- 1/2 taza de cebolla picada
- 1 diente de ajo picado
- 1 cucharilla polvo de ajo
- 2 cucharadas de aceite
- 2 tazas - 450 gr - tomate triturado
- 1/3 taza - 75 gr de pasta de tomate o tomate doble concentrado
- 1 cucharilla de sal - (aumentado)
- 1 cucharilla azúcar -- (añadido)
- 1/4 cucharilla de pimienta negro
- 1 cucharilla de perejil picado o seco
- 2 cucharillas de orégano
- 1 cucharilla albahaca seca (optativo
- 1 hoja de laurel
Preparación:
Caliente el aceite en una cacerola mediana a fuego medio. Saltear la cebolla. A medio hacer s añadir el ajo y el ajo en polvo, orégano albahaca, perejil, sal y pimienta hasta que quede la cebolla transparente. Agregue salsa de tomate y la pasta de tomate, reduzca el fuego a bajo y cocine a fuego medio durante ½ hora. Bajar el fuego y cocine entre ½ hora a 1 hora más dependiendo do lo fuerte que se desee. Probar para salar /pimentar mas al gusto.
Esta salsa de tomate básica italiana es lo suficientemente densa y sabrosa para poder usarse para hacer lasagnas,pizzas y para dips (por ejemplo para palitos fritos de queso mozzarella).
