How To make Mexicali Pasta Pie
1 lb Ground Pork
4 oz Can Green Chili Peppers,
-rinsed, seeded, and chopped 1 ts Sugar
1/2 ts Ground Cumin
1/4 ts Ground Coriander
1/4 ts Garlic Powder
3/4 c Corn Chips, slightly crushed
-(optional) 1/2 c Shredded Cheddar Cheese (2
-ounces) 1 Med. Chopped Onion
1 7.5 ounce Can
-Tomatoes, cut up 6 oz Can Tomato Paste
1 tb All-Purpose Flour
2 Beaten Eggs
3 c Hot Cooked Spaghetti (6
-ounces uncooked) 1/3 c Grated Parmesan Cheese
2 tb Butter or margarine
1 c Cream-style Cottage Cheese,
-drained Crumble ground meat into a 2-quart casserole. Add onion. Micro-cook, covered, on 100% power for 5 to 6 minutes, or till meat is no longer pink, stirring once to break up. Drain off fat. Stir in UNDRAINED tomatoes, tomato paste, flour, and seasoning. Micro-cook, covered, on 100% power for 7 to 8 minutes or till mixture is thickened and bubbly, stirring once. Set aside. Stir together beaten eggs, hot cooked spaghetti, and butter/margarine. Form spaghetti mixture in a "crust" in a greased 10-inch pie plate. Cover with clear plastic wrap. Micro-cook spaghetti crust on 50% power for 5 1/2 to 6 1/2 minutes or till crust is just set, giving dish a half-turn after 3 minutes. Spoon cottage cheese over bottom of crust. Spread meat mixture atop cottage cheese. Micro-cook, uncovered, for 3 to 3 1/2 minutes or till hot, giving dish a half-turn after 1 1/2 minutes. Sprinkle with topping; let stand 5 minutes. So Easy that my granddaughter did most of the work on this one..
She just followed the recipe as I called out ingredients and gave instructions.
We made two pies, one for her to to take home with her and one that stayed at this MawMaw's house.
We have been cooking together since she could stand on a chair at the kitchen counter.
MEXICALI MEAT PIE
This is the original recipe from years ago.
from the famous Pillsbury Bake Off contest.
BAKE OFF 16-$3,000 WINNER Mrs. Rex Acker Deming, New Mexico
INGREDIENTS
6 slices Hormel Bacon
1 lb. ground beef
1 cup (8-oz. can) drained whole kernel corn
1/4 cup finely chopped green pepper
1/4 cup finely chopped onion
1/4 cup corn meal
1/2 teaspoon oregano
1/2 teaspoon chili powder
1 teaspoon salt
1/8 teaspoon pepper
1 (8-oz.) can tomato sauce
I add several other spices to taste.. see video
1 egg
1/4 cup milk
1/2 teaspoon dry mustard
1/2 teaspoon Worcestershire sauce
1 1/2 cups shredded Cheddar cheese
4 stuffed olives, sliced ( I used way more!)
PIE CRUST
1 cup All Purpose or Self Rising Flour
2 tablespoons corn meal
1/3 cup firm bacon drippings or other shortening
3 to 4 tablespoons cold water
DIRECTIONS
OVEN 425°F.
Fry bacon until crisp; break into large pieces. Chill 1/3 cup drippings until firm. Brown ground beef in large skillet; drain. Stir in corn, green pepper, onion, corn meal, oregano, chili powder, 1/2 teaspoon salt, pepper and tomato sauce. Prepare Pie Crust. Place meat mixture in pastry-lined pan. Bake at 425°F. for 25 minutes. Combine egg, milk, 1/2 teaspoon salt, mustard, Worcestershire sauce and cheese. Spread on pie. Top with bacon and olives. Bake 5 minutes or until cheese melts. Let stand 10 minutes before serving. If desired, serve with a tomato sauce.
PIE CRUST
Combine flour and corn meal. Cut in bacon drippings until mixture is the size of small peas. Sprinkle water over mixture, stirring with fork until dough holds together. Form into a ball. Flatten to 1/2 inch; smooth edge. Roll out on floured surface to a circle 1 1/2 inches larger than inverted 9-inch pie pan. Fit into pan. Fold edge to form a standing rim; flute.
** I always make way more bacon and slice way more olives.
It also helps to save your drippings ahead of time. you definitely want to use the bacon drippings for the crust.
If you don't want to do a homemade crust you can ( and I have before) use a store bought pie shell, but it just isn't the same.

10 flour tortillas
1 tbsp butter
1 tbsp Ap flour
1 1/2 cup of chicken broth
16oz sour cream or crema Fresca
4 cups of melty cheese (1 cup is used for sauce)
1 medium onion
3 cups of shredded chicken
4 roasted poblano peppers (1 pepper to top casserole)
