Mexicali Faerie Fun Buddha Bowls
Buddha Bowls
Ingredients:
2 Cups Basmati Rice
2.5 Cups Water
1 Bunch Asparagus
1 Broccoli
1 Cauliflower
1 Red Pepper
1 Container of Cherry Tomatoes
1 Package of Presidents Choice Hot Taco Seasoning (or make your own)
1 Bunch of Cilantro
2 Cans Black Beans
2 Cans Chick Peas
1 Onion
1 Lime
1 Lemon
4 Mini Cucumbers (cut into bite size bits for serving)
3 Cloves of Garlic Crushed
Sour Cream for topping.
Salt & Pepper
Directions:
Veggies & Marinade
Juice of 1 lime
2TBSP PC Hot Taco Seasoning
2TBSP Olive OIL
2 Cloves of Garlic crushed
3TBSP chopped Cilantro
Salt & Pepper
Break Broccoli, Cauliflower & Asparagus into chunks & pieces, put in big bowl. Add whole cherry tomatoes & sliced red pepper. Mix in marinade and refrigerate for a couple of hours. Take out of fridge at least 30 minutes prior to putting in the oven at 425 for 30 minutes flipping half way through.
Rice
2 cups Basmati Rice
2.5 cups water
Juice of 1 lime
4TBSP Cilantro
3 TSP Taco Seasoning
Add all above ingredients in a pot with a lid, bring to a boil on high heat, stir a couple times, reduce to low with the lid on and cook for 8-10 minutes and remove from heat. To serve fluff rice with a fork.
Beans & Chick Peas
2 Cans Black Beans
2 Cans Chick Peas
1 Diced Red Onion
1 Crushed Garlic Clove
4 TSP PC Hot Taco Seasoning
Juice of 1 Lemon
4TBSP Cilantro Chopped
In a frying pan on medium high cook garlic, onion & cilantro until fragrant, add beans, chick peas, taco seasoning & lemon juice. Cook until warmed
Serving
In a bowl add rice, topping with veggies, beans, cucumber, pico de gallo & sour cream…..taaaadaaa Bon Appetite
Pico de Gallo
Ingredients:
6 Plum Tomatoes
1Banana Pepper
1 Jalapeno
3 Avocado
Juice of 2 limes
Onions, 1 red, 1 white diced
3 Cloves of Garlic Crushed
Bunch of Cilantro chopped
Salt & Pepper
2-3 Dashes of Franks Hot Sauce
Directions:
Chop tomatoes, banana peppers, jalapeno, onions & avocados into bite size bits. Add to bowl with garlic, cilantro, lime juice, salt, pepper and franks, mix well and serve with Buddha Bowl or on its own with tortilla chips. Enjoy.
