How To make Papaya Chutney
1 md Ripe papaya (about 1 pound)
1/4 c White vinegar
1/4 c Lemon juice
1 tb Chopped fresh cilantro
1 tb Vegetable oil
1 tb Honey
2 ts Grated gingerroot or
3/4 ts Ground ginger
1/4 ts Chili powder
1/8 ts Ground cinnamon
Pare papaya. Cut papaya in half and scoop out centers. Chop papaya finely. Heat all ingredients to boiling in 10-inch skillet; reduce heat. Cover and simmer 40 minutes, stirring occasionally. Serve warm or cold. ABOUT 1-1/4 CUPS SAUCE; 20 CALORIES PER TABLESPOONS.

Plastic'er chutney recipe: For someone who has not grown up in Bengal, coming across plastic chutney on a wedding lunch menu may be startling—who would want to eat that! But this used to be (and still is) a fixture on catered menus, especially when fruits for making other chutneys are not in season. You have green mango chutney for summer, tomato amshotto chutney for winter, pineapple or kool'er chutney for spring—but for the months of monsoon through autumn there aren't that many suitable fruits. It must have been a smart caterer who thought of using the bland papaya to make a chutney, and then gave it a shocking (almost clickbait) name—plastic chutney— because of how glossy and translucent the papaya slices appear once cooked in the sugar syrup! Not our favourite chutney, but it definitely is interesting.

Papaya Relish - Plastic Chutney | पपाया रेलिश | Sanjeev Kapoor Khazana
A wonderful, rather sweet and a lightly spiced take of raw papaya. Makes for an interesting accompaniment.
PAPAYA RELISH - PLASTIC CHUTNEY
Ingredients
2 cups grated raw papaya
¾ cup sugar
A small pinch of onion seeds (kalonji)
A large pinch of fennel seeds (saunf)
A small pinch of red chilli flakes
A pinch of salt
Method
1. Heat a non-stick pan, add papaya and sugar and mix well. Cook till the mixture turns translucent.
2. Add ¼ cup water, mix, cover and cook for 8-10 minutes or till soft.
3. Add onion seeds, fennel seeds, red chilli flakes, salt and mix well. Cook for 1-2 minutes.
4. Take the pan off the heat and allow to cool completely. Store in an air tight container and use as required.
