How To make Orzo with Sun Dried Tomatoes
1/2 c Sun-dried tomatoes
1 c Boiling water
1/2 c Plus 2 T fat free canned
Chicken stock 1/2 c Sliced onion
1/4 lb Sliced mushrooms
1/4 lb Orzo (1/2 cup uncooked)
1/2 c Fresh basil, chopped
Salt and freshly ground Black pepper to taste Place pot with 2 to 3 quarts water on to boil for orzo. Cut sun-dried tomatoes into small pieces and place in a bowl. Pour boiling water over them and let sit 5 minutes. Heat 2 T chicken stock in a nonstick pan and saute 1 minute. Drain the tomatoes, add them and remaining chicken stock to mushrooms. Raise heat and reduce liquid by half. When orzo water comes to a boil, add orzo and boil for 10 minutes. Drain. In a serving bowl, toss orzo with vegetable mixture. Instructions:
1. Heat that oven to 200°C ????
2. Grab a baking dish. Plop the cream cheese in the middle, then artistically surround it with Risoni, those luscious sun-dried tomatoes and roasted peppers. Oh, and don’t forget the garlic!
3. Now, drench that beauty with the hot stock.
4. Let it bake and bubble for about 25 minutes or until Risoni feels just right.
5. Once done, out it comes! Toss in the spinach, a splash of lemon, and generous heaps of Parmesan. Give it a good stir to get that spinach wilted and cheese all melty. Top it with some extra Parmesan if you're feeling cheesy ????

This creamy Orzo Chicken and sun dried tomato recipe is absolutely delicious and full of flavour. It's an easy recipe but would impress any dinner guest.
Ingredients:
1 tbsp butter (or use oil)
4 chicken thighs
1/2 cup sun dried tomatoes
1 cup orzo (also known as risoni)
a cup of kale chopped
1 onion
1 cup heavy cream
1 tablespoon dijion mustard
1.5 cup chicken stock
4 glove garlic
1/2 cup parmesan cheese shaved
1 teaspoon paprika
1 teaspoon cayenne pepper/chilli powder
1 garlic powder
1 teaspoon salt or to taste

My lemon feta orzo will blow you away. I served this dish to my mom and she said it’s one of the best recipes I have ever made. Although this is not traditional or even a Greek dish, it uses ingredients that are prominent in Greek cuisine such as dill, olive oil, feta, lemon juice, and brings me back home! I wanted to use traditional ingredients from the Mediterranean and make it as light and refreshing as possible. This recipe is perfect with any protein on top such as grilled chicken, kebabs, or shrimp as featured. I reserved a few tablespoons of my incredible marinade and decided to toss it in with shrimp and grill it which was the perfect way to add extra protein and make this a complete meal. This recipe is perfect for meal prep and can be made the night before. Every bite transports me to my childhood in Crete so I hope it makes it to your table too.
