small pieces 1/2 tb Fennel seeds 2 c Oil cured or brined black -- olives, rinsed & drained Olive oil Heat the olive oil in a small pot over low heat. Add the garlic, orange zest & fennel seeds. Simmer for 2 to 3 minutes. Combine all the ingredients in a glass or ceramic container. Let stand at room temperature for several hours before serving. Or store in a covered container in the refrigerator. Bring back to room temperature before serving.

Easy Appetizers: How to Marinate Olives
EatingWell's Jessie Price shows how to marinate olives in rosemary and lemon, an easy appetizer for a party. To make this marinated olives recipe you simply mix your ingredients together and marinade for a day or two for a healthy appetizer.
A classic recipe for marinated olives, goes great in salads or as sides
½ tsp heaped fennel seeds lemon 2 bay leaves (fresh) 3 rosemary sprigs 3 medium dried red chillies roughly chopped 250g drained mixed olives 50ml olive oil
How to make marinated olives!
They are perfect to serve as an appetizer! Here's how to make them at home ina few steps:INGREDIENTS
500g green olives
½ red pepper
2 garlic cloves
3 bay leaves
2 tbsp oregano
460ml (2 cups) white wine vinegar
Olive oil
METHOD
Use a meat mallet to crush each olive.
Place them in a bowl with water for 6 hours, changing the water repeatedly to remove excess salt. Chop the red pepper very finely, add white vinegar and let it rest for 30 minutes.
Drain the olives from the water and add vinegar. Let them rest for an hour.
Drain the olives from the vinegar, pour them into a bowl, drain the red pepper and add to the bowl of olives.
Add garlic, bay leaves, oregano, oil, and mix. Pour into glass jars, fill with oil, and close.
