8 oz SWISS CHEESE - SHREDDED
16 oz SAUERKRAUT, WELL DRAINED
8 oz MUNSTER CHEESE - SHREDDED
1 lb SMOKED brATWURST
10 oz CHEDDAR CHEESE - SHREDDED
OCTOBERFEST PIZZA CRUSTS: MAKE BASIC RED STAR CRUSTS AS DIRECTED BUT: IN STEP 1, STIR IN 2 TEASPOONS CAROWAY SEEDS. IN STEP 2, INCREASE WATER TO 1 CUP PLUS 2 TABLESPOONS. IN STEP 3, USE ONLY 1/2 CUP ALL PURPOSE
FLOUR AND STIR IN WITH 1 CUP PIZZA DIRECTIONS: DIVIDE INGREDIENTS IN HALF. FOR EACH PIZZA, SPRINKLE CRUST WITH SWISS CHEESE. TOP WITH SAUERKRAUT, THEN MUNSTER CHEESE AND brATWURST. NOTE: CRUSTS SHOULD BE PLACED IN PIZZA PANS AND BAKED ON HOT BAKING SHEETS. BAKE AT 400 DEG F. FOR 15 TO 20 MINUTES OR UNTIL CHEESE MELTS.

In the next chapter of cutting down on my grain waste, I decided to dry out some grains from a recent batch, and make some 12 personal Pizzas!
You can also make these pizzas in a traditional oven, bake at a highest possible temperature until crispy.

500g bread flour (all purpose is fine)=
7g of dried yeast (usually 1 pack)
15g baking malt
10g salt
30g softened butter
300ml Bavarian white beer (Helles), other beer or water
rock salt
1,5l water
50g baking soda (soda!! not powder!!)
for pretzel bites:
poppy seeds
sesame seeds
sunflower seeds
pumpkin seeds
grated cheese
► Obazda Recipe
125g mature camembert or brie
20g softened butter
75g cream cheese
1 minced small shallot
1 Tbsp finely sliced chives
1 tsp caraway powder
1/2 tsp paprika powder
salt + pepper to taste
1 Tbsp beer
2 tsp apple cider vinegar
pinch of sugar
