1 1/2 cups quick-cooking oats 1/2 cup whole wheat flour 1 teaspoon baking soda 1 teaspoon sugar 1/2 teaspoon salt 2 cups buttermilk 2 eggs 2 tablespoons butter or margarine

optional In a bowl, combine the first five ingredients. In another bowl, combine buttermilk, eggs and butter; stir into the dry ingredients until smooth. Bake in a preheated waffle iron according to manufacturer's directions until golden brown. Server with peanut butter and/or applesauce if desired.
Directions: 1. In one small bowl, whisk together the flour and baking powder. Set aside. In another larger bowl, mash the bananas, then whisk in the milk. Add the vanilla and honey. Add dry ingredients and mix together just until combined. 2. Grease your waffle iron with cooking spray or butter. Spoon the batter onto the iron. (Make sure not to add too much batter or it will overflow.) Cook waffles for 3-4 minutes. 3. Optional: Spread butter on the waffles while they are still warm. Top with your favorite fruits, nuts, or other toppings.
