How To make Oatmeal Scones
1 3/4 c Whole wheat pastry flour
1/3 c Sugar
1 1/2 ts Baking powder
3/4 ts Baking soda
1/2 ts Salt
3/4 c Chilled unsalted butter, cut
-into pieces 1 1/3 c Rolled oats
1/2 c Dried currants
10 tb Chilled buttermilk
1 Egg, beaten to blend (glaze)
Preheat oven to 375 deg F. Line cookie sheet with parchment. Combine first 5 ingredients in processor. Add butter and cut in until mixture resembles fine meal. Transfer to large bowl. Mix in oats and currants. Add 10 tablespoons buttermilk and mix just until dough comes togeterh, adding more buttermilk by tablespoons if dry. Turn dough out onto floured surface. Pat into 1-inch thick round. Cut out rounds using 3 inch cookie cutter. Gather scaraps; pat into 1-inch thick round. Cut out more scones. Transfer
scones to prepared cookie sheet, spacing 3 inches apart (scones will spread during baking). Brush generously with egg glaze. Bake scones until brown, about 30 minutes. Cool slightly on rack. Serve warm. Source: Bon Appetit, November 1991 Posted by Linda Davis

◇Ingredients ( Large scones 4 pieces or small scones 6 pieces)
120g soy milk
2 tsp apple cider vinegar
1 tsp vanilla extract
120g superfine rice flour
70g GF ground rolled oats (I used Bob’s Red Mill Gluten Free Rolled Oats)
15g tapioca starch
2 tbsp Natvia natural sweetener
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp Xanthan Gum
50g Nuttelex (margarine)
40g dark chocolate
50g frozen blueberries
1 egg for egg wash (or your choice of milk)
◇Preparation
- Chop dark chocolate roughly
- Cut the margarine into small pieces and keep it cool in the fridge
- Preheat the oven to 200℃
- Place a baking paper (or a mat) in the baking tray
◇Instructions
1. Make dairy-free buttermilk at the beginning. Pour the soy milk into a cup and add apple cider vinegar and vanilla extract. Keep it cool in the fridge.
2. Place rice flour, oats, tapioca flour, sugar, baking powder, baking soda, xanthan gum into a large bowl. Combine well.
3. Add Nuttelex (margarine) into the dry ingredients and using your fingertips, rub the butter into the flour until the mixture resembles breadcrumbs.
4. Make a well in the center. Pour the buttermilk that was made at the beginning in the center.
Cut through the mixture with a scraper until it forms a soft dough. Do not overwork.
5. Turn onto a lightly floured (rice flour) surface, then bring the dough together.
Cut in half.
A half is for chunky chocolate scones and
the other half is for blueberry scones.
6. Add chopped dark chocolate into the half dough.
Make a rectangle shape.
Cut in half. Put one on the other, then gently press down. Repeat it 2~3 times.
Place the square scones on a baking tray with a baking paper(mat).
7. Add blueberries into the other half dough.
Just work the same way I made chunky chocolate scones.
This time, cut into triangle.
Place the triangle scones on the baking tray with the baking paper(mat).
8. Brush egg wash (or your choice of milk) on them.
※Egg wash - shiny finish and give it a color
※Milk - mat finish
Bake at 200℃ in the preheated oven for about 20 minutes.
Rotate the tray halfway through baking.
9. Place on a wire rack to let them cool for about 10 minutes.
These are best when they are served warm.
※The result of baking may be changed depending on each oven at home. The temperature and the baking time in this recipe are only a guide.

Healthy Blueberry Oat Scones No Flour Recipe
These blueberry oat scones are a healthy option to regular scones. And they are so delicious! This recipe has no flour and very little sugar. You can have them for breakfast or as a snack.
Ingredients:
- 8 tbs cold butter
- 160 mil cold buttermilk (or less, add gradually as needed)
- 1.5 cup oat flour
- 1 cup old fashioned oats
- 2 oz granulated sugar
- 1 oz monkfruit sweetener (or just sugar if you prefer) - you can buy here:
- 1 tsp baking powder
- 3/4 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 90 g frozen blueberries
Bake at 375 F for 18 minutes

June Recipe: Oatmeal scones
( lovely for breakfast with marmalade)
INGREDIENTS
• 7 oz self- raising flour
• 5 oz Oatmeal
• 4 oz butter
• 1 tsp bread soda
• Pinch of salt
• 1 oz sugar
• Crushed nuts and seeds(opt)
• 2 eggs
• Buttermilk
METHOD
• Combine all the dry ingredients.
• Work in the butter with your finger tips
• Beat eggs with a little buttermilk and start to combine mixture.
• Add enough buttermilk to bring together to a soft dough.
• Roll out to about an inch in height and cut out scones.
• Brush with some of the egg/milk and sprinkle with oatmeal or seeds.
• Oven 180°- 200°C for about 12 minutes until golden brown.
Strawberry Oatmeal Scones
There’s no better way to ring in the last weekend of Summer than with these Strawberry Oatmeal Scones. I used to think that making scones were so hard until I began making them myself and later realizing that they weren’t. This recipe calls for 100% oat flour except to flour the surface to work on the dough that I used the regular flour. It is healthy and delicious! Good for breakfast/Tea time. Enjoy :)
