How to make Oatmeal Cookie with Raisins
Ingredients
3 cups rolled oatmeal
1 cup wheat flour
1 cup raisin
1/2 tsp salt
1/2 tsp baking soda
3 tbsp melted butter
1/4 cup oil
2 tbsp fresh milk
1/4 tsp cinamon
1/3 cup white sugar
1/4 cup brown sugar
1/2 tsp vanilla
2 tbsp corn starch

Oatmeal Raisin Chews
2-1/4 cups all-purpose flour
1/2 tsp. baking soda
1/4 tsp. salt
1 cup oats (not instant)
1 cup dark brown sugar, packed
1/2 cup white sugar
1 cup salted butter, softened
2 Tbsp. honey
2 tsp. pure vanilla extract
2 large eggs
1-1/2 cups (8 oz. by weight) raisins
1/2 cup (3 oz.) walnuts, chopped (optional)
Yield: 3 dozen without walnuts
3-1/2 dozen with walnuts
Preheat oven to 300° F.
In a medium bowl, combine the flour, baking soda, salt, and oats. Mix well with a wire whisk and set aside.
In a large bowl, blend sugars, butter, honey, vanilla, and eggs until light and fluffy.
Add the flour mixture, raisins, and walnuts and blend at a low speed just until combined. Don't overmix.
Drop by rounded tablespoons onto ungreased cookie sheets, 1-1/2 inches apart. Bake for 22-24 minutes or until cookies are light golden brown. Immediately transfer cookies with a spatula to a cool flat surface.

Honey Oatmeal Raisin Cookies
Looking for a healthy sweet? This is your recipe. I must let you know it has a STRONG taste of honey. If you are looking for a sugary taste, this is not the recipe. Each cookie is 100 calories. Mix 1 c. instant oats, 3/4 c. whole wheat (I would use a little less), 1 1/2 tsp. baking powder, 1/8 tsp. salt, 1 1/2 tsp. cinnamon, 2 TBSP unsalted melted butter or coconut oil, 1 egg (can be substituted), 1 tsp. vanilla, 1/2 c. COXS HONEY and 1/4 c. plumped raisins. Bake at 300° for 10 minutes or less. This can be converted to gluten and dairy free. Daughter of a successful beekeeper, Virginia grew up working the bees, packaging honey and helping her dad make deliveries in Southeast Idaho and parts of Utah.
