1/2 c Butter-flavor shortening
1 1/2 c Quick-cooking oats
2/3 c Sugar
1 tb Flour
1 Egg; lightly beaten
1 ts Vanilla
1 ts Baking powder
1/4 ts Cinnamon
Recipe by: Sue Klapper In large skillet, melt 1/4-cup shortening. Add oats. Cook and stir on medium heat, 10 minutes, or until oats are golden brown. Cool to room temperature. Preheat oven to 350~. Grease baking sheets with shortening. Coat with flour, then shake off excess flour. Place remaining shortening in medium-size microproof bowl. Microwave on medium power 1 minute. Repeat until melted. Add toasted oats, sugar, flour, egg, vanilla, baking powder and cinnamon. Stir until well-blended. Drop by level measuring tablespoonfuls 3 inches apart onto greased baking sheets. Bake 8 to 9 minutes or until lightly browned. Cool on baking sheet 1 minute. Remove carefully to cooling racks with wide pancake turner. Source: Milwaukee Sentinel. -----

Oatmeal Lace Florentine Cookies
1/3 cup butter
1/4 cup light brown sugar
1/4 cup granulated sugar
1/4 cup corn syrup
1 tsp vanilla
1/3 cup flour
1 cup quick oats
1/8 tsp salt
1 cup milk chocolate morsels
Preheat oven to 350 degrees
In a medium sauce pan over medium-low heat melt butter, sugars and corn syrup stirring continuously until it boils. Remove pan from heat and stir in vanilla. Then stir in flour, oats and salt until well combined.
Using a teaspoon place small dollops of cookie mixture spaced about 3 inches apart onto a parchment lined baking sheet. Using a rubber spatula press cookie mixture until thin keeping in a circular form. Place baking sheet into oven for about 3 1/2 minutes then turn tray half way and continue to bake for another 3 or 4 minutes or until golden brown. Keep a close eye on it during the last couple of minutes to avoid burning.
Remove tray from oven and keep cookies on tray until completely cooled.
Melt chocolate morsels in microwave stirring at every 30 seconds interval until melted. Be careful not to burn the chocolate.
Using fork, spoon or piping bag drizzle chocolate in zig zag motion over cookies and allow to completely cool and harden. Makes approximately 3 dozen individual cookies.

How to Make Oatmeal Lace Cookies | Simple and Easy 8 Ingredient Recipe | yourgirljanet
These delicious 8 ingredient cookies are an easy recipe to follow and a fast bake. Crispy golden brown on the edges with a chewy center, these cookies are sweet and salty and 100% delicious. Warning - they're highly addicting!
Ingredients:
???? 1 cup of sugar
???? 3 tbsp of flour
???? 1/4 tsp of baking powder
???? 1/2 tsp of salt
???? 1/2 cup of melted butter
???? 1 egg
???? 1 cup of large flake oatmeal (do not use steel cut oats!)
???? 1/2 tsp of vanilla
1. Preheat oven to 350 F, line baking sheets with parchment paper.
2. In a small bowl, mix sugar, flour, baking powder and salt (dry ingredients).
3. In a larger bowl, beat egg and mix in the melted butter, vanilla and oatmeal. Mix in the dry ingredients.
4. Space apart and drop 6 teaspoons of batter on each baking sheet (they will spread during the baking process).
5. Bake for 5-7 minutes (set your timer and watch your oven, they burn easily).
6. Cool for a few minutes and remove from parchment paper.
Depending on the size of your spoonfuls, this recipe can make 2-3 dozen cookies. Enjoy! ????
