How To make Oatmeal Cocoanut Crisps
2 c Butter
2 c Brown sugar
2 c White sugar
2 ts Vanilla
4 Eggs
3 c Sifted flour
2 ts Salt
2 ts Baking soda
6 c Quick oats
1 1/2 c Cocoanut
Cream together butter and sugars until fluffy. Stir in vanilla, then add eggs, one at a time, beating after each addition. Sift together flour, salt, and soda. (I just stir together.) Add to creamed mixture. Stir in rolled oats and cocoanut. Drop by teaspoonfuls about 2 inches apart onto well-greased baking sheets. Bake at 350 degrees for 10 to 15 minutes. Cool on rack. **OR**omit cocoanut, divide dough into thirds. Add 1/3 cup cocoanut to a third, add 1/3 cup raisins to a third, and add 1/3 cup chopped nuts to the final third. **OR** you can just omit cocoanut and add nothing. This recipe makes 14 to 16 dozen depending on how big a spoonful you drop. They freeze MAGNIFICENTLY, actually taste better, brings out the butter flavor or something. -----

RANGER COOKIES are filled with oats, rice Krispies, coconut, brown sugar and chocolate chips.
Ranger cookies are similar to cowboy cookies are filled with oats, rice Krispies, coconut, brown sugar and loads of chocolate chips.
Prep time: 40 minutes
Cook time: 12 minutes
Servings: appr 40 cookies
INGREDIENTS
1 cup shortening or softened butter
▢1 cup light brown sugar
▢1 cup granulated sugar
▢2 eggs
▢1 teaspoon baking soda
▢½ teaspoon baking powder
▢½ teaspoon salt
▢1 teaspoon vanilla extract
▢2 cups all-purpose flour
▢2 cups crispy rice cereal/rice Krispies or corn flake
▢1 cup old-fashioned oats
▢1 cup shredded coconut or coconut flakes
▢1 cup chocolate chips
METHOD
1. Pre-heat oven at 350°F.
2. Stir together all-purpose flour, baking soda and baking powder. Keep aside.
3. In a large bowl add softened butter (or shortening) light brown sugar, granular white sugar, vanilla extract and salt. Using stand mixer or hand mixer, beat until sugar and butter are creamy.
4. Add eggs to the creamed butter mix and beat until eggs are incorporated.
5. Add flour mix in parts and beat until combined.
Do not over beat.
6. To the batter add rice cereal, shredded coconut, old fashioned oats.
7. Using silicon spatula fold the mix until combined.
8. Fold in chocolate chips into the batter.
Note: cookie batter is supposed to be dry and crumbly. Check video for texture.
9. If batter is too dry you can add ¼ to ½ cup shortening or butter depending on how dry the batter is.
10. I did not chill the batter. If required do refrigerate cookie batter for 30 minutes.
11. Use a medium scoop to drop cookie batter onto a baking tray lined with parchment paper or silicon mat. Ensure cookies are spaced well, atleast 3 inches gap between one another.
12. Bake in pre-heated oven at 350°F for 11 to 14 minutes or until edges are golden brown and center is slightly fluffy.
13. Remove from oven and let cookies cool in the pan for 5 minutes before moving it to wire cooling rack to cool completely.
14. Store leftover cookies in airtight containers at room temperature for up to a week.

Crunchy & Chewy Oatmeal Coconut Cookies | Delicious No Eggs Cookie Recipe
i n g r e d i e n t s :
• 1 cup (100 g) rolled oats
• 1 cup (100 g) shredded (finely) coconut (dry)
• 1 cup (150 g) all purpose flour
• 1/3 cup (70 g) granulated sugar
• 2 tsp baking powder
• A pinch of salt
• Zest of 1 lemon
• 120 g (1/2 cup) unsalted butter
• 1/4 (80 g) cup honey
Bake the cookies at 350ºF/180ºC for 11-12 min. This recipe makes about 18-19 cookies.
* The baking time and temperature are only a guide. As every oven is different, you may need to make adjustments to get the right result.

1 tbsp = 15 ml
