Operation: Homemade Baked Beans
An adventure in beans and tomato sauce brings me to this project. Attempting to make homemade Heinz style baked beans. UK style beans are different to others in some Countries, perhaps a little less sweet / smokey in some ways - stored in a tomato sauce with a mild sweet kick they are the ultimate comfort food! This was a recipe to make UK style ones from home and I picked up some cool tips along the way, i'm not sure if i'd do it again but it was really fun to make my own, they were fresher and tasted identical! Check out the recipe if you fancy giving it a try for yourself!

Homemade Heinz Baked Beans
I hate how Heinz baked beans are kinda slimy…. so I make it from scratch instead. It's crazy easy and tastes SO SIMILAR to Heinz it's almost scary! (Except, you know. No preservatives or artificially flavouring, and you've made it fresh instead of sitting in a can for weeks/months/years ????)
Classic Baked Beans
Recipe at:
Baked beans are an American classic. This updated version is perfectly balanced with sweetness from the molasses and brown sugar, smokiness from the bacon, and a bit of acid from the onion, mustard, and tomato paste. Using two different colors of beans creates more visual interest.
Part 2: New England Style Baked Beans
This is Part 2 of the New England Style Baked Beans. I cooked them for a total of 5 hours, the last half hour uncovered and they turned out perfectly.
I added some extra ingredients to improve the flavor: 2 tablespoons Austin's Own Texas Barbeque Sauce, 1 teaspoon Tamari, 1 tablespoon Dijon mustard, and freshly ground black pepper.
Bean of the Week: New England Baked Beans
I'm posting the recipe for a full pound of beans but in the demo I used 1/2 pound. If you want only 1/2 pounds of baked beans cut all the ingredients in half.
1 pound Rancho Gordo Yellow Eye beans (or Cranberry beans, Domingo Rojo or other beans), soak for 6 hours and simmered for one hour until just beginning to soften
2 teaspoons dry mustard
1 tablespoon tomato paste
1 teaspoon salt
1/3 cup molasses
1/4 cup turbinado sugar
2 tablespoons maple syrup
1/2 of a large onion, sliced very thinly
Preheat oven to 250°
Drained cooked beans, reserving the bean broth. Place 2 cups of bean broth in a medium bowl. Whisk in the mustard, tomato paste, salt, molasses, turbinado sugar, and maple syrup. Put half the beans in a large Dutch oven or cast iron enamel pot. Add half the sliced onions. Put the rest of the beans in and top the the rest of the onions. Pour the sauce over the beans. Cover and bake for 3 or more hours. I cooked mine for a total of 5 hours. Check occasionally to make sure all the liquid has not evaporated. Add more broth as necessary, but not too much, because you want a thick sauce at the end. Add salt and pepper to taste or other ingredients of your choice. I added 2 tablespoons Austin's Own Texas BBQ sauce, 1 teaspoon tamari, 1 tablespoons Dijon mustard and freshly group pepper.
