2 cups All-purpose flour
1/2 cup Brown sugar
packed
2 teaspoons Baking powder
1/2 teaspoon Baking soda
1/2 teaspoon Salt
8 ounces Vanilla yogurt
1/4 cup Butter or margarine :
melted
1 Egg
1 Nectarine chopped
peeled peach 1/4 cup Almonds :
sliced
Recipe by: Pillsbury, Healthy Baking Preheat oven to 400 degrees; grease the bottoms only of the muffin cups or line with paper baking cups. In a large bowl, combine the flour, brown sugar, baking powder, baking soda and salt. In a small bowl, combine the yogurt, margarine and egg; blend well. Add to the dry ingredients; stir just until the dry ingredients are moistened. The batter will be very thick. Stir in the nectarine. Fill the muffin cups 3/4 full. Sprinkle the almonds over the batter. Bake for 15 to 22 minutes, or until golden brown and a toothpick inserted in the center comes out clean. Cool for 1 minute; remove from the pan. Serve warm. Recipe;
2 cups Flour
1 Tbsp Baking powder
1 Tbsp sugar
Pinch salt
2 + 1/2 Nectarines
Aprox. 1/4 tin Apricots
3/4 cups Oat milk
1/4 cup Vegetable oil
1/4 cup coconut yogurt
Baked for 30 mins at 190C on Bake.

- 5 tbsp + 70g sugar
- 130g flour

- 2 large eggs at room temperature
- 113g butter
- 60g buttermilk
- 1 tsp vanilla essence
- 1/4 tsp +1/8 tsp almond extract
- 30g biscuit crumbs
bake at 180°C/350°F for 50min- 1hour

We love her because she is made with simple, pantry-friendly ingredients and makes our kitchen smell amazing! This is the definition of summer comfort - sweet soft nectarines, topped with a warming cinnamon oat topping. also so easy to customize with whatever fruits you have on hand (peaches, apricots, cherries, pears, etc!!) Serve warm, with vanilla ice cream or coconut yogurt!
Ingredients (makes three single serve)
3 nectarines, chopped
2 tbsp sugar
1 tbsp flour (I used oat)
juice of half a lemon
1/4 tsp cinnamon
1/4 tsp ginger
Topping
1 cup rolled oats
1 tbsp sugar
2 tbsp coconut oil
1/4 tsp cinnamon
Directions
1. Preheat the oven to 375F.
2. Mix the nectarines and filling ingredients until well coated.
3. In a separate bowl, mix the topping ingredients together
4. Divide the peach filling among the jars or ramekins (alternatively you can bake it all together in one baking dish)
5. Layer on toppings in each serving
6. Bake for 25 minutes or until tops are golden brown.
7. Let it cool slightly before topping with ice cream or coconut yogurt!
