Ingredients:
Cake:
•2 cups all purpose flour
•2 cups sugar
•2 teaspoons cinnamon
•1 teaspoon baking soda
•¼ teaspoon salt
•1 ½ cups vegetable oil
•4 eggs
•3 cups shredded carrots
Frosting:
•8 ounces softened cream cheese
•1 stick softened, unsalted butter
•1 pound (4 cups) powdered sugar
•2 teaspoons vanilla extract
Directions:
Cake:
•Preheat an oven to 350 degrees.
•Grease two round, 8 inch cake pans.
•In a bowl, whisk together the all purpose flour, sugar, cinnamon, baking soda and salt.
•Whisk in the vegetable oil and eggs until fully incorporated.
•Using a spatula, mix in the shredded carrots.
•Evenly divide the batter into the prepared cake pans and spread the batter in each pan to make even layers.
•Bake in a 350 degree oven for 45 minutes, or until a toothpick inserted in the middle comes out clean.
•Allow to cool to room temperature before frosting.
Frosting:
•Using a stand mixer with the paddle attachment, cream the softened cream cheese and softened unsalted butter until fully combined.
•Mix in the powdered sugar until fully incorporated.
•Mix in the vanilla extract until combined.
Assembly:
•Put a small amount of frosting in the center of a cake board.
•Remove the first layer of the cake from a cake pan and place it on the cake board.
•Spoon the frosting onto the top of the first layer and spread evenly.
•Remove the second layer of the cake from a cake pan and place on top of the first, frosted cake layer.
•Spoon the frosting onto the top of the second layer and spread evenly over the top and sides of the cake.
