How To make Mussels and Shrimp with Penne
1 T Olive oil
1/8 t Crushed red pepper flakes
4 T Parsley, finely chopped
1 t Mint leaf, crumbled
3/4 lb Shrimp, shelled, deveined
1 T Brandy
3 ea Garlic cloves, chopped fine
2 c Fresh tomatoes, chopped,
-peeled, seeded 1 t Leaf basil, crumbled
1/4 c Bottled clam juice
1 lb Mussels in shells, scrubbed
-and de-bearded 1 lb Penne
1 ea Lemon rind, grated
Saute garlic and pepper flakes in olive oil, until garlic just begins to color, 2-3 minutes. Add tomatoes, parsley, basil, and mint and bring to a boil. Lower heat, cover and simmer for 10 minutes. Add clam juice and shrimp, cover; cook over low heat for 2 minutes, stirring once. Add mussels and brandy, cover and cook for 2-3 minutes longer or until shrimp are pink and mussels open. Carefully remove mussels form sauce. Cook Penne al dente, drain and place in warm serving bowl; top pasta with hot sauce, stir to mix well. Place mussels on top. Garnish with chopped parsley and lemon rind.

This recipe can satisfy a number of meal occasions. It's quick and easy so you can prepare it for a weeknight dinner. Yet it's also perfect for casual entertaining as it is packed with flavor and a touch of heat from the Italian herbs and crushed red pepper. Use jumbo shrimp if you want to make it impressive!
Ingredients!
4 oz. large shrimp
Pappardelle pasta
1 tbsp. chicken bouillon
1 tbsp. oil
1 tsp paprika
1 tsp Italian seasoning
1 onion powder
1 tsp garlic powder
1 tsp cayenne pepper
1 tsp Cajun seasoning
2 tbsps. unsalted butter
1 small onion chopped
1/2 tbsp. minced garlic
2-3 tbsps. tomato paste
1 tsp dry pepper flakes
1 tsp Cajun seasoning
1 handful fresh spinach
1 cup heavy cream
1 cup parmesan cheese
salt and pepper to taste

Mussels with White Wine and Garlic
Mussels are inexpensive and exciting to cook! They steam quickly too, making for a quick dinner to the table in minutes. The ingredients I've used in this recipe are pretty common, and most are interchangeable. If you don't like spicy, leave out the chili flakes. You can leave the parsley out or use something like scallion tops.
It is important to note that when you purchase these fresh, your grocery store should pack them with ice and you should keep them on ice until you are ready to cook them. Before you make the recipe, give them a rinse in cold water and debeard them. The mussel will have a beard that looks like a fuzzy bunch of string, and all you do is yank it out.
Live mussels are naturally closed if they are living. If they are slightly open, and you poke them and the shell closes, this means they are still living and are okay. I'm saying this because if you go through this recipe and find that at the end there are some that did not open, these are no good to eat and should be thrown away.
