How To make Mushroom Strognoff
1/2 lb Mushrooms
3/16 ts Salt
1/16 ts Pepper
1/3 Onion; in 1/4-in slices
1 1/3 tb Butter
2/3 tb Flour
1/3 c Vegetable stock
1/3 ts Dijon mustard
1/16 c Sour cream; room temperature
1. Melt 2 tablespoons of butter in a pan and add the flour. 2. Mix in the
vegetable stock and heat, stirring all the time until thickened. 3. Blend in the mustard and remove from the heat. 4. In another pan melt the remaining butter and add the mushrooms and onions and saute for 5 minutes until the onions start to soften. 5. Add the mushrooms to the sauce, and simmer for 15 minutes. Remove from the heat and stir in the sour cream. 6. Stir in the onions, and serve. I sometimes add coriander or lemon grass. Lemon grass goes down well, and if you add coconut milk/cream instead of the sour cream,lime juice and tomato paste you get a nice Thai mushroom dish. Thai dishes are often like a soup, so increase the liquid a bit and serve in a large bowl with two spoons so you can share it, and a large plate of rice. It's one of my own creations so report back!

About Stroganoff
The dish is named after one of the members of the influential Stroganov family. A legend attributes its invention to French chefs working for the family, but several researchers point out that the recipe is a refined version of older Russian dishes.
Mushroom Stroganoff or Mushroom Stroganov (UK: /ˈstrɒɡənɒf/, US: /ˈstrɔːɡənɔːf, ˈstroʊɡ-/; Russian: бефстро́ганов, romanized: befstróganov,[1] IPA: [bʲɪfˈstroɡənəf]) is an altered version of Russian dish, consists of sautéed pieces of mushrooms served in a sauce of mustard and smetana (sour cream). Mushrooms are common in many variants.The sauce is a simple roux mixed with prepared mustard and broth, and finished with a small amount of sour cream.Stroganoff's popularity extends to Japan, where it is most commonly served with white rice, or white rice seasoned with parsley and butter.

How to Make Mushroom Stroganoff | Creamy Mushroom Stroganoff
Learn how to make Mushroom Stroganoff.
This simple and creamy Mushroom Stroganoff is originally from Russian cuisine even though it is very popular worldwide. An authentic Stroganoff is generally made with meat but I chose to replace it with the mushrooms. This recipe is very flavorful, delicious but lighter in calories and healthier. You can make it vegan by using vegan sour cream or cashew paste for the creamy sauce and of course dairy free butter. Thank you so much for watching!
Ingredients:
* 1 1/2 tablespoons butter
* 2 Tsp garlic cloves minced
* 1 large onion chopped
* 8 oz. white mushrooms sliced vertically in 4 pieces.
* 1/2 teaspoon thyme
* 1 teaspoon Soy sauce for veg option (Worcester sauce for non veg option since it has Anchovies in it)
* 1/2 teaspoon salt
* 1/4 teaspoon ground black pepper
* 1 cups vegetable stock
* 2 tablespoons cornstarch
* chopped parsley for garnishing
