1 lb Ground beef
2 lg Yellow onions,
-chopped 1 lb Kidney beans
1/2 lb Tomato paste
6 oz Water
3 Garlic cloves
-(or more, to taste) 1 Bay leaf
Ketchup (1 "glub") 1 T Chili powder
-(or more to taste) Brown the meat and onions, separately if desired. In a large, heavy pot, combine the meat and onions, and the other ingredients except the chili powder. Simmer at least one hour. Six or more hours is better. Stir in the chili powder. NOTES: * A mild, hearty chili -- This chili won't win any awards in Texas, but it's a nice, mild, flavorful dish. The recipe can easily be multiplied; I usually make a triple batch and freeze the excess. For a spicier chili, use more chili powder, or, even better, mix your own spices. Ingredients:
1 pound ground beef
1 medium onion - diced
2 green bell peppers diced
1/2 cup celery
1-2 tablespoons chili powder
2 cans kidney beans
1 quart tomato sauce
salt and pepper to taste
Brown the ground beef along with the peppers and onions.
Add in the chili powder and stir well to mix, cook an additional 3-4 minutes.
In large sauce pan add the beans and tomato sauce.
Mix in the ground beef mixture. Mix well and taste for salt and pepper.
Cooking for 15-30 minutes.

Today we’re gonna answer that question.
Now enchiladas are a favorite in our kitchen but it’s always a war between how they’re gonna get made.
My Mom is going to make her Tex-Mex style enchiladas using Wolf Brand Chili and Longhorn Cheddar, while I’m gonna whip up my enchiladas with a more traditional red sauce and topped with queso fresco.
Let’s fire it up and make some ENCHILADAS!
Mom's Chili Sauce
How much is a sprinkle?
CHILI SAUCE
Original recipe from Mom:
40 tomatoes (24 lbs)
25 small onions (6 cups after thru blender)
2 bunches celery (3 lbs)
4 small red peppers
4 large green peppers
2 light green hot peppers
Modified vegetable part of recipe:
1/2 bushel tomatoes (25 lbs)
5 large onions
3 batches celery
3 jalapeno peppers
2 cayenne peppers
3 sweet banana peppers
4 green bell peppers
Spices and other ingredients:
1/4 C celery seed
1 T cinnamon
1 t black pepper
6 C white vinegar
1 lb (2-1/3 C) white sugar
1 lb (2-1/3 C) brown sugar
1-1/2 T ground cloves
3/8 C Kosher salt
1 sprinkle ground allspice
1 sprinkle ground nutmeg
All powdered spices must be fresh!
Follow directions in the video.
Results in September 2015:

(2 jars did not seal properly and are in the refrigerator, the rest are stored on a basement shelf)
