How To make Mock Paneed Veal
BILLS20086:
2 8oz chicken breasts -- bone,
-skin Salt and pepper 1 Egg beaten with
4 Tb water
1 c Butter :
or less
1 c Vegetable oil or less
2 c Italian bread crumbs
Lemon wedges :
garnish
Using half butter and half oil, slowly heat 1/3" oil in a heavy skillet. Cut breasts in half to produce 4 pieces. Put pieces between wax paper and pound until 1/4" thick. Cut each piece in half, season with salt
and pepper; dip in egg wash and coat evenly with bread crumbs. Raise heat under oil and brown chicken on both sides about 2 minutes per side, being careful not to burn. Serve with lemon wedges. Source: Upperline Restaurant, N.O.LA

TO TORONTO’S FAVORITE SANDWICH SPOT.
14 locations, all family owned and operated.
California Sandwiches was born in Toronto’s Little Italy. During the mid 1960’s, the Papa/Bertucci family purchased a local grocery store with the hope of supporting a growing family. They quickly discovered they had something special when customers were coming for lunch instead of groceries. As the popularity of their homemade sandwiches grew, they decided to jump on the opportunity. In 1967 the first California Sandwiches was born. From its inception as “La Rinacente”, the veal sandwich quickly became one of Toronto’s favorites.
Today, very little has changed. There are now 14 locations, all family owned and operated. Traditional methods of food preparation are still in practice. Each store has its own butcher and the meat is cut on site. Only the finest in Italian tomatoes are ground for our sauce that is made fresh daily. Our kaiser buns are baked by an Italian bakery and delivered every morning. And our cheeses and produce are bought and prepared for use as needed. Quality food and attention to detail have kept this business strong and valued.
