Mocha Pudding Cake
Yields: 6 to 8 servings
Ingredients:
1 cup flour
1 ½ tsp. baking powder
¼ tsp. salt
1 cup sugar, divided
6 tbsp. unsweetened cocoa, divided
½ cup milk
3 tbsp. vegetable oil
1 tsp. vanilla
½ cup mini semi sweet chocolate chips
1 cup strong coffee
Preparation Directions:
~ Combine flour, baking powder, salt, 2/3 cup sugar and 4 tbsp. cocoa powder in a large bowl. In a small bowl stir together milk, oil, and vanilla; add to dry ingredients, stirring until just blended. Spread batter into a lightly greased 8-inch baking pan.
~ Combine chocolate chips, 1/3 cup sugar and 2 tbsp. cocoa powder. Sprinkle over batter. In a saucepan bring coffee to a boil; pour evenly over batter.
~ Bake at 350 degrees for 25 to 30 minutes or until cake springs back when lightly touched in the center.
~ Serve warm with ice cream.

Mocha Pudding Cake:
Ingredients
Flour 1 cup
Cocoa powder 1 cup
Baking powder 2 tsp
Salt 3/4 tsp
Sugar 3/4 cup
Whole milk 1 cup
Butter 4 tbsp
Egg 1
Dark brown sugar 3/4 cup
Strong coffee 3/4 cup
Method:
Heat the oven to 350°F Coat baking dish with butter and set aside.
Combine flour, 3/4 cup of the cocoa, baking powder, and salt in a medium bowl and whisk. In a large bowl, whisk together 1/2 cup of the granulated sugar, milk, butter, egg, until evenly combined and smooth. Add flour mixture to milk mixture and whisk until just combined Transfer batter to the prepared baking dish and spread evenly. Combine remaining 1/4 cup cocoa, remaining 1/4 cup granulated sugar, and brown sugar in a small bowl until well mixed, then sprinkle over batter. Pour coffee over batter, do not stir, and place in the oven.
Bake for about 25 minutes. Serve with cream.
Lobia biryani:
For lobia biryani:
Rice half boiled 1- 1/2 cup
Cooked red kidney beans 2 cup
Carrot, cubed 2
Oil 1/2 cup
Cumin seeds 1 tsp
Cloves 3-4
Ginger-garlic paste 1 tbsp
Coriander powder 1 tbsp
Turmeric powder 1/4 tsp
Red chili powder 1½ tbsp
Tomatoes chopped 3
Salt to taste
Green chilies chopped 2-3
Fresh coriander leaves chopped as required
Method:
Heat oil in a pan, add cumin seeds. When they begin to crackle, add chopped onions and sauté for 3-4 minutes. Add carrots, chopped green chilies, turmeric powder, coriander powder, garam masala powder and cook for 3-4 minutes. Add ginger-garlic paste and sauté well.Add tomatoes and mix well. Cook for 3-4 minutes. Add cooked beans, salt and mix well. Cook covered for 2 minutes.
Add chopped coriander leaves and mix well. Turn off the heat. Take a pot. Spread a layer of half the parboiled rice and cooked beans gravy Put dum for 15 minutes.
Serve.

Cocoa-Mocha Pudding
Pudding is one of those comfort desserts for me that I don’t have often but when I do, I feel why don’t I make it more often because it’s so easy to make, not as sweet and a very wholesome dessert. This recipe needs very few ingredients and makes almost 6-8 servings. You can make pudding for a date night, for a fancy dinner or a kid’s party. Try it.

Coffee Pudding Cake is a modern and tantalizing dessert, which, with its infused coffee flavour is aromatic and flavourful as well.
COFFEE PUDDING CAKE
It is both a cake and a pudding – just try it and you will love it
Ingredients
1 tbsp + 1 tsp instant coffee powder
1¼ cups refined flour (maida)
1½ tsps baking powder
½ tsp salt
3 tbsps cocoa powder
¾ cup + 1 cup sugar
2 tbsps melted butter
1 tsp vanilla essence
¾ cup milk
50 gms dark chocolate, grated
1½ cups warm milk
Method
1. Preheat oven to 180° C.
2. Keep a sieve over a bowl and put refined flour, baking powder, salt, 2 tbsps cocoa powder, 1 tbsp instant coffee powder in it and sift. Mix well.
3. Add ¾ cup sugar, melted butter, vanilla essence and ¾ cup milk and mix with a hand blender. Put the batter into a baking dish and spread evenly.
4. Put remaining sugar, remaining cocoa powder, remaining coffee powder into the same bowl. Add dark chocolate and warm milk and mix well.
5. Pour this over the batter in the baking dish. Bake in the preheated oven for about 40-45 minutes. Check once after 35 minutes to see if it is done. If it is not done bake for some more time.
6. Remove from the oven and serve.
