1 3/4 c Flour
3/4 c Cocoa powder; unsweetened
2 ts Instant expresso or
Coffee granules 1 ts Baking soda
1/4 ts Salt
1/8 ts Ground pepper
1 1/3 c Light brown sugar; packed
1/2 c Vegetable oil
1/4 c Sour cream, low-fat
1 Egg
1 ts Vanilla
1/2 c Powdered sugar
Recipe by: Great Tasting Diabetic Recipes 1. Mix flour, cocoa, expresso, baking soda, salt and pepper in medium
bowl; set aside. 2. Beat brown sugar and oil in another medium bowl with electric mixer
at medium speed until well blended. Beat in sour cream, egg and vanilla. 3. Beat in flour mixture until soft dough forms. Form dough into disc;
cover. Refrigerate dough until firm, 3 to 4 hours. 4. Preheat oven to 350 degrees. Place powdered sugar in shallow bowl.
Cut dough into 1 inch pieces; roll into balls. Coat with powdered sugar. Place on ungreased cookie sheets. 5. Bake 10 to 12 minutes or until tops of cookies are firm to the touch.

How to make mocha crinkles cookies
ingredients
1 cup unsweetened cocoa powder
1 1/2 cup granulated sugar
1 1/2 cup vegetables oil
1 1/2 tbs instant coffe granules not Coffee grounds
1tsp ground cinnamon
1/8 tsp cayenne pepper
2 tsp baking powder
1 tsp salt
1tbs vanilla extract
4 large eggs
1 cups all purpose flour
1 1/2 powder sugar
INSTRUCTION;
1.using the mixer beat the cocoa powder, sugar.oil, instant coffee granules, cinnamon, cayenne pepper, baking powder , and salt together until well combined.
2. beat in the vanilla and eggs then scrape the bowl, slowly add in the flour. the dough will look like
brownie batter .refrigarate for 1 to 2 hours until firm enough to roll by hand.
3.pre heat the oven 350 degrees F and line baking sheets with parchment paper.
4. roll the dough into 1 inch balls then place each ball in a bowl of powdered sugar and coat throughly
before placing on the baking sheets .space the ball at least three apart.
5. bake for 10 -12 minutes, cool completely on the baking sheets before moving.

Coffee Chocolate Crinkle Cookies
These impressive looking little bites are a cinch to make and will earn you rave reviews. Molten, chocolatey centres make these treats a great addition to a dessert table, or for guests when you feel like sharing.
Coffee Chocolate Crinkle Cookies
Prep time: 10 min
Chill time: 4 hr (or overnight)
Total time: 4 hr 30 min
Makes: 24
1 cup (250 mL) all-purpose flour, sifted
1 tsp (5 mL) baking powder
1/2 tsp (2 mL) salt
1/2 cup (125 mL) cocoa powder
1/3 cup (75 mL) canola or vegetable oil
1 tbsp (15 mL) ground coffee such as Sensations Colombia Cartegena Medium Roast Ground Coffee
1/2 cup (125 mL) sugar
1/2 cup (125 mL) firmly packed brown sugar
2 eggs
1 tsp (5 mL) vanilla extract
1/4 cup (60 mL) icing sugar
Directions:
1. Whisk together flour, baking powder and salt until blended; set aside. In another large bowl, use electric mixer to beat together cocoa powder, oil and ground coffee until combined. Beat in both sugars. Add first egg; beat in completely. Add second egg and vanilla; beat in completely. Stir in dry ingredients just until blended. Cover dough; chill 4 hr. (or overnight).
2. Preheat oven to 350°F (180°C). Line two baking sheets with parchment paper. Using a tablespoon measure, scoop dough into heaped spoonfuls (the dough will be sticky). Roll into balls then roll in icing sugar to coat; shaking off excess. Place balls on prepared baking sheets about 2 in. (5 cm) apart.
3. Place sheets on top and bottom-third oven racks, switching racks and rotating sheets halfway through baking. Or use the middle rack and bake cookies one sheet at a time, rotating sheet halfway through baking. Bake cookies 6 to 8 min. (total bake time) until surfaces begin to crack. The interior of the cookies will look molten. Transfer cookies to wire rack to cool completely. Store in airtight container up to 3 days or freeze up to 1 month.
Tips:
• For cocoa crinkle cookies, roll in cocoa powder instead of icing sugar.
• Sandwich coffee ice cream between 2 cooled cookies. Freeze until ice cream is firm before serving.
