all purpose flour 1/2 cup
sugar 4 tbsp
cooking oil 1/4 cup
1 egg
cocoa powder 2 tbsp
baking powder 1 tsp
milk 1/4 cup
for mousse filling part:
semisweet (Dark) chocolate 150g + whipping cream (hot) 60ml
whipping cream (cold) 200ml + powdered sugar 2 tbsp
on top : (not mention on video)
200g dark chocolate + 120ml milk - melt in microwave for 30sec to 1 min, mix it well, let it cool down and pour on top (!!! make sure it is cold enough !!!)

• butter and flour for coating and dusting the cake pan
• 3 cups all-purpose flour
• 3 cups granulated sugar
• 1½ cups unsweetened cocoa powder
• 1 tablespoon baking soda
• 1½ teaspoons baking powder
• 1½ teaspoons salt
• 4 large eggs
• 1½ cups buttermilk
• 1½ cups warm water
• ½ cup vegetable oil
• 2 teaspoons vanilla extract
✅Instructions
1️⃣ 00:00:17 - Preheat oven to 350 degrees. Butter three 9-inch cake rounds. Dust with flour and tap out the excess.
2️⃣ 00:01:19 - Mix together flour, sugar, cocoa, baking soda, baking powder, and salt in a stand mixer using a low speed until combined.
3️⃣ 00:01:44 - Add eggs, buttermilk, warm water, oil, and vanilla. Beat on a medium speed until smooth. This should take just a couple of minutes.
4️⃣ 00:02:31 - Divide batter among the three pans. I found that it took just over 3 cups of the batter to divide it evenly.
5️⃣ 00:02:47 - Bake for 30-35 minutes until the cake meets the toothpick test (stick a toothpick in and it comes out clean).
6️⃣ 00:03:06 - Cool on wire racks for 15 minutes and then turn out the cakes onto the racks and allow to cool completely.

The better quality cocoa powder you use the better the cake will taste.
00:03:30 - CHOCOLATE CREAM CHEESE BUTTERCREAM FROSTING
✅Ingredients
• 1½ cups butter, softened
• 8 oz cream cheese, softened
• 1½ cups unsweetened cocoa powder
• 3 teaspoons vanilla extract
• 7-8 cups powdered sugar
• about ¼ cup milk (as needed)
✅Instructions
1️⃣ 00:03:38 - In a large bowl, beat together butter and cream cheese until fluffy. Use a hand mixer or stand mixer for best results
2️⃣ 00:03:57 - Add in cocoa powder and vanilla extract. Beat until combined.
3️⃣ 00:04:23 - Beat in powdered sugar, 1 cup at a time. Add milk as necessary to make a spreadable consistency. The frosting should be very thick and will thicken even more if refrigerated.
Notes
In the photos above, an extra dark cocoa powder was used in the frosting. Extra dark cocoa will result in a much darker, almost black frosting.
METRIC MEASUREMENTS

• 10 ml vanilla extract
✅Instructions
1️⃣ Preheat oven to 176 degrees Celsius. Butter three 23 centimeter cake rounds. Dust with flour and tap out the excess.
2️⃣ Mix together flour, sugar, cocoa, baking soda, baking powder, and salt in a stand mixer using a low speed until combined.
3️⃣ Add eggs, buttermilk, warm water, oil, and vanilla. Beat on a medium speed until smooth. This should take just a couple of minutes.

Flourless Chocolate Mocha Torte | The Cotswolds Baking Workshop
Welcome to my Spring series of short baking video's. Today I'm making Flourless Chocolate Mocha Torte.
Ingredients
170g plain chocolate, broken into pieces
113g unsalted butter
150g caster sugar
Pinch of salt
2 teaspoons instant espresso powder
1 teaspoon vanilla extract
180g beaten eggs, approximately 3 large
43g cocoa powder
Ganache (optional)
170g plain chocolate
113g double cream
Preheat oven to 190C/170 fan and prepare a 20cm cake tin by greasing the sides and lining the bottom. Melt the chocolate and butter in a bain marie, taking care the bottom of the bowl doesn’t come in contact with the water. When melted, stir in the sugar, salt, espresso powder, and vanilla. Add the beaten eggs and beat briefly until smooth then add the cocoa powder and mix to combine.
Transfer the batter to the prepared pan and bake for approximately 25 minutes until a thin crust has formed on the top. Cool in the pan before removing and turning upside down onto a serving plate (the bottom becomes the top), it is ok if the edges crack a little. Allow the cake to cool completely before glazing.
To make the ganache, place the chocolate in a heatproof bowl, bring the cream up to simmering and pour the hot cream over the chocolate. Allow it to stand without stirring for 5 minutes then slowly stir until the chocolate is smooth. Spoon the glaze over the cake and allow to set, this may take several hours.
Top baking tip! When melting chocolate or chocolate and butter in a bain marie, bring the water to a full boil and turn off the heat before placing the bowl of chocolate on top. The residual heat should be sufficient to melt the chocolate without the risk of steam getting into the mixture, causing it to seize.

Moist chocolate cake recipe:
Ingredients:
1 cup all-purpose flour(120gm)
1 cup granulated sugar(200gm)
1 tsp baking powder(4.8gm)
1/2 tsp baking soda(2gm)
1/3 cup cocoa powder (35gm)
1/2 tsp salt
2 eggs 【(or, 120gm curd)】
2/3 cup hot water(158ml)
1/4 cup vegetable oil(60ml)
1 tsp vanilla extract
Instructions:
Preheat your oven to 350°F (175°C) and grease and flour a 8-inch square or round cake pan.
In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Mix well.
Add the eggs, hot water, vegetable oil, and vanilla extract to the dry ingredients. Beat the mixture on medium speed for about 2 minutes until the batter is smooth and well combined.
Pour the batter into the prepared cake pan and spread it evenly.
Bake in the preheated oven for approximately 30-35 minutes or until a toothpick inserted into the center comes out clean.
Remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer it .

chocolate frosting recipe.
Ingredients:
1 cup chocolate chips(180g)
1/2 cup milk(122gm)
1/4 cup dark cocoa powder(30gm)
1/4 cup butter(57g)
1/2cup granulated sugar(100g)
2 tablespoons corn starch(15gm)(or plain flour)
1 teaspoon vanilla extract
Instructions:
In a medium-sized saucepan, combine the chocolate chips, milk, dark cocoa powder, unsalted butter, granulated sugar, and corn starch.
Place the saucepan over low heat and stir continuously until the ingredients are melted and well combined. Make sure to stir constantly to prevent burning and ensure smooth consistency.
Continue cooking the mixture on low heat for about 5-7 minutes, stirring continuously. The mixture should thicken and become glossy.
Remove the saucepan from heat and let the mixture cool for a few minutes.
Stir in the vanilla extract and mix well.
Transfer the frosting to a bowl and let it cool completely. You can speed up the cooling process by placing the bowl in the refrigerator for about 2-3 hours.
Once the frosting has cooled and thickened further, it's ready to use. You can spread it over cakes, cupcakes, or any other desserts of your choice.

Flourless Moist Chocolate Cake / Gluten Free / No Flour
Flourless Chocolate Cake (pan size 38 x 26 cm or 15 x 10 in)
1 cup = 240ml; 1 tbsp = 15ml; 1 tsp = 5ml
120g dark chocolate (1 cup)
30g unsalted butter (2 tbsp)
30ml milk (2 tbsp)
4 egg whites
a pinch of salt
50g sugar (4 tbsp)
4 egg yolks
1 tsp vanilla extract (5ml)
Bake at 170C for about 20 minutes
Chocolate Cream Filling
150g dak chocolate (1 cup + 2 tbsp chopped chocolate)
90g heavy cream (1/3 cup)
300g cold heavy cream (1 1/4 cup)
30g sugar (2.5 tbsp)
Cocoa Syrup
75ml hot water (1/3 cup)
1 tbsp cocoa powder (7g)
2 tbsp sugar (25g)
Mix to dissolve and let it cool down completely
Chocolate Glaze
50g cocoa powder (1/2 cup)
115g sugar (1/2 cup + 1 tbsp)
85ml water (1/3 cup)
85g heavy cream (1/3 cup)
1 tbsp gelatine powder (9g)
3 tbsp cold water to bloom gelatine (45ml)

Making the Frosting:
Before proceeding, make sure the meringue has totally cooled down.
Add softened butter (1 tbsp at a time), beating well after each addition until the mixture is smooth.
***Mixture may look curdled before all of the butter is added but will come back together by the time beating is finished. So keep on beating. If you followed the tips below about butter, they will definitely come together.
Tips:
Make sure to get a good brand of unsalted butter. Not margarine.
Soften butter at room temperature. It should still be cool to the touch, but when pressed using a little pressure, your finger will leave an indentation. If your finger sinks into the butter, then it was overly softened.
