Today I’m going to share with you how to make the easiest and most delicious pollo asado flautas! These are so creamy and cheesy I promise you the whole family is going to enjoy them the green chiles are the cherry on top it adds a little spice to the chicken it’s just delicious!!! Tip ‼️⚠️ if you you the whole tortilla make sure you cook it before stuffing it, so that way the whole tortilla cooks, and not just the outside???? also if you find it hard for the flauta to fry without unrolling, use the toothpick method OR use a flour paste( 1 tbsp flour 1 tbsp water)
I M P O R T A N T ⚠️
Make sure your oil is set on medium heat and it’s hot before frying! For air fryer at 400 for 3-4 minutes for baking in oven at 425 for 10 minutes make sure you flip them half way and for either one brush them with oil ????❤️

McCormic rotisserie chicken seasoning OR Lawreys pollo asado seasoning
4 oz cream cheese at room temperature
1/4 cup sour cream
1/4 cup hatch green chile

PRO TIP!!!!
The 2 morita adds a little smokiness if you can’t find them you can substitute for 1 dried chile
chipotle or you can simply skip on it ????
If cheese is at room temperature, it will melt in less than 8 minutes ????
Ingredients: 24 enchiladas
Spice mix:
Salt I used 2 1/2 tsp
2 tsp black pepper
2 tsp ground cumin
2 tsp chipotle powder
1 tsp oregano
Filling:
2 lbs chicken breast(sliced in half)
1 medium size potato; chopped in small cubes
1 carrot;chopped in small cubes
1/2 onion;sliced
1 jalapeño
1 roma tomato
2 minced garlic cloves
For the sauce:
2 chile ancho
2 chile morita
2 chile árbol
3 garlic cloves
1 tsp vinagre
4 tbsp tomato paste
5 cups chicken broth or water
4 tbsp butter(salted or unsalted)
4 tbsp all purpose flour
4 tbsp chili powder
Salt to taste
To assemble:
Oil
24 corn tortillas
Melting cheese of your choice

Today I’m going to be sharing with you how to make the the best caldo Tlalpeño (Mexican chicken soup) it’s seriously super delicious! If you like chicken tortilla soup you going to love this one! Traditionally caldo Tlaleño is made with garbanzo beans and epazote well today I couldn’t find epazoteat my local grocery store and garbanzo beans, my family don’t like them on this soup ???? but you can definitely add some the flavor is all on the broth! And don’t pass on the queso Oaxaca!

Traditional Mexican Chicken Soup
Tortilla soup
Chicken enchilada soup
Caldo de pollo con arroz
Picadillo
Tip : if you don’t like to have the pieces of tomatoes, onion and chipotle peppers, blend them with 3 cups of chicken broth!!!!
Ingredients:
4 lbs split chicken breast
5 roma tomatoes
1 big onion (1/2 whole 1/2 chopped)
Chipotle peppers in adobo sauce I ended
up using 8 chiles
1 head of garlic
Fresh oregano, thyme, bay leaves, rosemary
2 calabacitas (Mexican squash)
5 carrots
3 large potatoes
1/2 lb green beans
Sweet corn
2 tsp black pepper
2 tsp coarse salt
3 -4 tbsp chicken bouillon
Queso Oaxaca
