How To make Mikey's Meatloaf
1 lb Ground pork
1/2 lb Ground lamb
1/2 lb Ground veal
2 Carrots (grated)
1 Onion (chopped)
1/4 c Saltine crackers (crushed)
1/4 c Oatmeal
1/4 c Bread crumbs (or less)
1 ts Salt
1/2 ts Black pepper
1/4 ts Cayenne pepper
1/2 c Sour cream
1 Egg
1/2 ts Dried sage
Cook carrot & onion in microwave on high for 3 or 4 min. to soften. Combine all ingredients in large bowl and mix well. Add only enough bread crumbs so that the loaf holds together well. Form into a loaf & place into an Au gratin or shallow baking pan, large enough to hold it. Preheat the oven to 350 deg. and cook loaf for 1 1/2 hrs. or until internal temp. reaches 170 deg. Serve with salsa ketchup or your favorite sauce.

Stove Top Stuffing Meatloaf
Stove Top Stuffing Meatloaf is the perfect quick and easy dinner recipe! With just four simple ingredients, you'll have dinner on the table in a flash.
Servings: 6
Prep: 10 mins Cook: 55 mins Total: 1 hr 5 mins
Ingredients:
▢2 large eggs
▢1/2 cup water
▢6 ounce box Stove Top stuffing mix any flavor
▢2 pounds lean ground beef
▢1/2 cup ketchup divided
Instructions:
1. Preheat the oven to 350°F. Spray a 9×13″ baking pan or dish with non-stick cooking spray; set aside.
2. In a large mixing bowl, whisk the eggs and water together until well combined.
3. Add the stuffing mix, ground beef, and 1/4 cup of ketchup. Use your hands to mix the ingredients together until well combined.
4. Transfer the meat to the baking dish and shape the meat into a loaf.
5. Brush the meatloaf evenly with the remaining 1/4 cup of ketchup.
6. Bake at 350°F for 55 minutes. Cool for 10 minutes then slice and serve.
Notes
For a sweeter glaze, add 2 tablespoons brown sugar to the 1/4 cup ketchup before brushing it over the meatloaf.
