Amazing Microwave Peanut Brittle

A fast and easy way to make delicious peanut brittle! Big thanks to Omar at for sending this amazing recipe!!!!
Ingredients
1 1/2 cups raw, shelled peanuts
1 cup sugar
1/2 cup light corn syrup
1/8 tsp salt
1 tsp butter
1 tsp vanilla extract
1 tsp baking soda
Directions
Generously butter a cookie sheet and set it aside.
In a 2 qt Pyrex or microwave safe dish, add raw shelled peanuts, sugar, light corn syrup and salt.
Stir together.
Microwave on high for about 5 minutes.
Remove dish from microwave and add butter and vanilla extract. (Be careful as dish will be very hot.)
Stir until well blended.
Microwave for an additional 2 minutes or so or until the mixture takes on a light brown brittle color.
When the mixture gets to the desired stage, remove from microwave and add baking soda.
Stir quickly. The mixture will become light and foamy.
Quickly pour mixture onto the buttered cookie sheet and spread it into a thin layer.
Let cool and then break into pieces to serve.
Store in an air-tight container.

How To Make Pecan Brittle In The Microwave
Ingredients
1 cup of sugar
1/2 cup of Karo syrup
1 tbsp of butter
1 tsp of vanilla
Pinch of salt
1 cup of pecans
1 tsp of baking soda
Lightly butter 9x13 cookie sheet.
In microwave safe bowl, stir together sugar and syrup. Microwave for 2 minutes on high power. Remove from microwave and stir. Microwave 2 more minutes. Remove from microwave and stir in butter, vanilla, nuts and salt. Stir until nuts are coated. Microwave 3 minutes and 30 seconds.
Remove from microwave and add baking soda. Stir until foamy and immediately pour onto cookie sheet. Tilt the baking sheet to spread Brittle. Do not spread with a utensil or it will lose its crispy, shiny texture.
Allow Brittle to cool completely. Break into desired sized pieces.

Ingredients
1 1/2 cups dry roasted peanuts
1 cup white sugar
1/2 cup light corn syrup
1 pinch salt (optional)
1 tablespoon butter
1 teaspoon vanilla extract
1 teaspoon baking soda
Directions
Grease a baking sheet, and set aside. In a glass bowl, combine peanuts, sugar, corn syrup, and salt. Cook in microwave for 6 to 7 minutes on High (700 W); mixture should be bubbly and peanuts browned. Stir in butter and vanilla; cook 2 to 3 minutes longer.
Quickly stir in baking soda, just until mixture is foamy. Pour immediately onto greased baking sheet. Let cool 15 minutes, or until set. Break into pieces, and store in an airtight container.
**Everyone microwave is different so PLEASE make sure your Brittle DOES NOT BURN**

Pecan Brittle
Ingredients:
1 cup Sugar
1/2 cup Golden Eagle or Kyro Syrup
1 1/4 cup Chopped Pecans
2 tablespoons Butter
1 teaspoon Vanilla Extract
1 teaspoon Baking Soda
Non-stick Cooking Spray
Directions:
Place sugar and Golden Eagle in (lightly sprayed with non-stick) microwave save container and cook for 3 minutes. Take out and stir in the pecans and place back in the microwave cook for 3 minutes. Now add in the butter and vanilla stir and then return to the microwave for 1 minute. Now add the baking soda and stir. (The mixture with start foaming up as mixing.) Then pour out in a lightly sprayed cookie sheet and spread out the brittle. Let cool. Once cooled break into pieces and place in a ziplock bag. Enjoy!

The EASIEST and YUMMIEST Microwave PEANUT BRITTLE
Peanut brittle is a delicious candy that is usually enjoyed during the holidays, but can be enjoyed any time of year. This microwave peanut brittle is super easy and quick to make for your family and friends.
I really like making this simple peanut brittle because it literally takes only 15 minutes start to end, and much of that time it is cooking in the microwave. Also, no candy thermometer is needed, rather you just look for the nice golden brown color.

Supplies and Equipment Needed:
• 1 cup sugar
• ½ cup corn syrup
• 1 cup peanuts (Red Spanish peanuts, preferred)
• 1 tsp butter
• 1 tsp vanilla
• 1 tsp baking soda
• Cookie sheet with a little pad of butter
• Microwavable bowl
• Heatproof spatula
• A HUGE SMILE!!!
***Because microwaves are different, yours may take a little more time, or a little less time. Just look for the golden brown color before adding the baking soda. Optional - sprinkle on m&ms to make it chocolaty and yummy!
Microwave times:
4 minutes – sugar and corn syrup
3 minutes – added peanuts
1 minute – added vanilla and butter
Add baking soda, stir, and spread on cookie sheet
