1 ga Water
4 lb Honey
6 Cloves
2 Sticks cinnamon
Juice & peel from one lemon 1 ts Activated dry yeast
In a large nonreactive pot, add the next four ingredients to the gallon of water. Boil all together for 30 minutes, then strain into a crock that will hold it with a little room to spare. When cooled, add the yeast, dissolved in some of the liquid. Allow to ferment in a cool place - 55 degrees is ideal - until it ceases bubbling and the liquor clears, then bottle, cap tightly and store in a cool, dark cellar. It should not be used for at least a month, and longer is better. Pick and Process - Making Dandelion Wine
There are a few tricks to making a good dandelion wine. I've used and modified a recipe in Euell Gibbons' book Stalking the Wild Asparagus. I've also listened attentively to my friend Meester's stories about brewing. I think I've got the knack of it now and I share a couple key points in this video.
You can only really collect dandelion petals in quantity in the spring, so it is important to be ready for them at the opportune time. I primary ferment for a week, secondary ferment for several months, and then either rack to clear and then bottle or just bottle and wait patiently. I usually make the wine in May or early June and then crack open the first bottle to drink around November or December.
