How To make Maple Apple Muffins
2 each eggs -- beaten
1/2 cup Margarine - becel light
or butter
1 cup maple syrup :
100% Pure
1 1/2 cups apples, peeled -- diced
3 cups flour
1 tablespoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
Preheat oven to 350. Cream eggs and margarine in a bowl until light and fluffy. Add Maple Syrup and apples. Mix well. Sift in dry ingredients. Stir until moistened. Put into greased muffin tins. Bake 20 to 25 minutes.

- 2 cups (300 grams) all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 2 1/2 teaspoons ground cinnamon
- 1/2 teaspoon salt

INGREDIENTS:
Dry Ingredients
- 1½ Cup All Purpose Flour
- 3-4 whole Granny Smith Apples Peeled, Cored and chopped to bite size
- ½ Tsp Baking Powder
- ½ Tsp Baking Soda
- ½ Tsp Ground Cinnamon
- 1 Pinch Nutmeg
- ½ cup Pecan Nuts chopped
Wet Ingredients
- ½ Tsp Apple Cider Vinegar
- ½ cup Whole Milk
- ½ Tsp Thick Greek Yogurt
- 2 Tbsp Maple Syrup
- ½ cup Dark Brown Sugar
STEP BY STEP PROCESS
1) Add all the dry ingredients (except Apples and Pecan) in the bowl and whisk well.
2) Add the wet ingredients along with Chopped Apples & Pecan Nuts and mix well.
3) Pour the Muffin Batter in the lined Muffin tin. Top with Pecan Nuts. Bake for 11-12 minutes or until a toothpick inserted in the center comes out clean.
4) Cool it down and glaze it with some more Maple Syrup and serve
If you're making with Eggs, skip the Yogurt and add 1 whole Egg at room temperature along with the wet ingredients.

For cake:
- 1 ½ cups brown sugar
- ⅓ cup oil—coconut, vegetable— butter works, too!
- 1 egg
- 1 cup buttermilk
- 1 tsp vanilla
- 1 tsp baking soda
- 2 ½ cups flour
- 2 ½ cups chopped apples
For topping (I always double the below!):
- ½ cup sugar
- 1 tsp cinnamon
- 1 Tbsp butter, melted

Directions:
1. Preheat oven to 325°. Mix ingredients in order given, stirring until just combined. Fold in apples. I add 1 tsp cinnamon and 1 tsp salt to the batter. ????????♀️
2. Pour batter into buttered 9x13 pan (or muffin tin, like me! ????????♀️)
3. Combine last three ingredients to make topping and sprinkle evenly over batter.
4. Bake for 45 mins—muffins are much faster, check at 25 mins.
5. YUM!
