How To make Macadamia Shortbread Cookies
1 c All-purpose flour
3/4 c Confectioners' sugar
1/4 c Cornstarch
1 c Macadamia nuts (4 oz)
3/4 c Unsalted butter; softened
Finely chop the macadamia nuts. Sift flour, sugar and cornstarch. Stir in nuts. Beat butter in bowl at medium speed until creamy. At low speed, beat in flour mixture. Using a level tablespoon, shape dough into balls. Place 2 inches apart on ungreased baking sheets. Flatten each ball with a fork. Bake in preheated 300 degree oven 25 to 30 minutes until just lightly browned around edges. Cool baking sheet on rack 5 minutes. Transfer cookies to rack to cool. Variations: Press half a macadamia nut into each cookie before baking. Sprinkle with rock sugar upon removing cookies from oven. From Family Circle's "Our Best-ever Cookie Collection". -----

I'm making a shortbread this time. I always wanted to try making a long-shaped shortbread so I did. You don’t use an egg for the shortbread and it makes a crunchy texture that just melts in your mouth. Give it a try!

◼17cm square mold
160g unsalted butter
A pinch of salt
75g powdered sugar
230g flour
150℃ for 45 min
➢Method
Add a pinch of salt to softened unsalted butter
Add powdered sugar and mix
Add the flour and mix until incorporated
Spread the dough into a 17 cm square pan
Mark 16 equal portions
Poke holes in the dough
Bake in a preheated oven at 150°C for 45 minutes
Remove the mold while the dough is hot and cut it with a knife

???? Shortbread Cookies Ingredients:
1 cup (16 tbsp, 230g) butter
1/2 cup (50g) powdered sugar
2 cups (250g) all purpose flour
2.5 inch cookie cutter
???? Shortbread Cookies Instructions:
1. Preheat the oven to 350F (177C).
2. Using a hand held or stand mixer, beat butter and powdered sugar until light and creamy. Add in flour and mix until mixture resemble crumb texture.
3. Knead the dough with hands until dough forms. Cover the dough with plastic wrap and keep it in the fridge for 30 minutes.
4. Lightly dust the work surface with flour, roll out the dough to a 1/4 inch thick rectangular shape. Using a cookie cutter (I used 2.5 inch round cookie cutter), cut into any shapes you like.
5. Place the cookies on a baking sheet lined with a silicone mat or parchment paper
6. Bake for about 16-18 minutes, or until cookies are pale golden brown.
7. Transfer to a wire rack to cool.

I tasted the Honolulu Cookies Company’s Mini Bites Chocolate Chip Macadamia Premium Shortbread Cookies I bought from Costco and I fell in love with its tastes. I wanted to make a homemade version of these cookies. In this recipe, I achieve a pretty similar taste and I really enjoyed eating them! I wanted to share this recipe so that you can also enjoy the homemade Premium Shortbread Cookies at home as well.

3g (1/2 tsp) Salt -
3g (1/2 tsp) Sea Salt -
