Roasted Brussels Sprouts with Garlic Aioli -- Lynn's Recipes
Lynn demonstrates how to make Roasted Brussels Sprouts with Garlic Aioli. This is a great side dish to a dinner. From Costa Kitchen.
20 Brussels Sprouts cut into wedges
Canola Oil
Salt
Pepper
Aioli Sauce:
6 Tablespoons mayonnaise
¼ teaspoon minced garlic
1 teaspoon lemon juice
1 Tablespoons finely chopped flat leaf parsley
Preheat oven to 400°. Place Brussels Sprouts on a baking sheet and drizzle with oil. Salt and pepper to taste and mix around the Brussels Sprouts on the pan to ensure they all get nicely coated in the oil.
Bake for 15 minutes or until golden brown on at least one side.
While the Brussels Sprouts are roasting, mix together the mayonnaise, garlic, parsley and lemon juice. Serve in a ramekin alongside the finished Brussels Sprouts.

Fettuccine Alfredo with Chicken -- Lynn's Recipes
Lynn demonstrates how to make a great dinner recipe, Fettuccine Alfredo with Chicken. This is a lighter version of alfredo sauce, using light cream cheese. The alfredo sauce can be used in other recipes, as well. From Kraft.
½ pound fettuccine, uncooked
1 lb. boneless skinless chicken breasts cut into strips*
4 teaspoons flour
1-1/4 cups fat-free, reduced-sodium chicken broth
4 ounces (1/2 of an 8 ounce package) Neufchatel cheese, cubed
3 Tablespoons Parmesan cheese, grated, divided
¼ teaspoon garlic powder
¼ teaspoon black pepper
Cook pasta as directed on package.
Meanwhile, cook chicken in a large nonstick skillet on medium-high heat 5-7 minutes or until done, stirring occasionally. I add a little olive oil to the pan for sautéing. Remove the chicken from the skillet. Mix the flour and broth in the same skillet with a whisk. Stir in the Neufchatel, 2 Tablespoons Parmesan cheese, garlic powder and pepper; cook 2 minutes or until mixture boils and thickens, stirring constantly. Stir in the chicken.
Drain the pasta; place in a large bowl. Add the chicken mixture and toss to coat. Sprinkle with the remaining Parmesan and if you prefer, you can add more.
*I like to use chicken tenders and cut into cubes for this recipe. That way they are bite size.
If desired:
You can add 2 cups of chopped hot cooked broccoli before serving.
Sprinkle with chopped parsley.
Substitute whole wheat fettuccine.
Substitute 1/8 ground nutmeg for the garlic powder.

Chili Pasta Skillet- One Pot Meal - Lynn's Recipes
Lynn demonstrates how to make a super easy one pot meal, Chili Pasta Skillet. You can make this in a large skillet or pot, but I am using my Pampered Chef Rock Crok. From Better Homes and Gardens.
Makes 6 servings
1 pound lean ground beef, or you can substitute ground turkey, if desired
3/4 cup chopped onion
1 (15 ounce) can red kidney, beans, black beans or red beans, rinsed and drained
1 (14-1/2 ounce) can diced tomatoes, undrained
1 (8 ounce) can tomato sauce
1/2 cup (2 ounces) dried elbow macaroni
1 (4 ounce) can diced green chili peppers, drained
2 teaspoons chili powder
1/2 teaspoon garlic salt
Red Pepper Flakes, to taste for extra heat, if desired, optional
1/2 cup shredded Monterey Jack or cheddar cheese (2 ounces)
In a large skillet cook meat and onion until meat is brown and onion is tender. Drain if necessary
Stir in beans, undrained tomatoes, tomato sauce uncooked macaroni, chile peppers, chili powder, red pepper flakes, if using, and garlic salt. Bring to a boil; reduce heat. Simmer, covered, about 20 minutes or until macaroni is tender, stirring often. Remove skillet from heat; sprinkle mixture with cheese. Cover and let stand about 2 minutes or until cheese is melted.

Creamy Garlic Pasta – Lynn’s Recipes
Lynn demonstrates a quick and easy Creamy Garlic Pasta. This is great with a green salad and garlic bread for a quick dinner. Adapted from Pinterest.
2 teaspoons olive oil
4 cloves garlic, minced
2 Tablespoons butter
¼ teaspoon salt
½ teaspoon pepper
3 cups chicken broth, plus a little extra, if needed
½ pound spaghetti
1 cup grated Parmesan cheese
¾ cup heavy cream
1-1/2 Tablespoons dried parsley
In a medium pan, heat olive oil over medium heat. Add the garlic and stir for 1-2 minutes. Add butter and melt, stirring constantly. Add salt, pepper, and 3 cups chicken broth. Bring to a boil. Add the pasta and cook according to box directions. Add a little more chicken broth if the noodles start to stick to the bottom and burn. Add the cheese, cream, and parsley when the pasta is cooked to desired tenderness and mix thoroughly. Serve immediately.
