Craving some luau stew but don’t have the time to make it? Don’t despair. Just thaw a package of frozen luau and simmer it with chicken to make this simple stew, which can also be made with beef or squid.
Chicken Luau

A nice alternative if you do not have squid, or just feel like having some chicken. A traditional dish at a luau is squid luau.
2 lb. luau leaf
Water
2 c. coconut milk
1 tsp salt
Cooked chicken or squid
Wash your luau leaves thoroughly. Remove the stems and fibrous parts of veins.
Place wash leaves in large saucepan. Add water. Bring to a boil, lower heat, and simmer for one hour, stirring frequently. (I ended up having to cook it for a LOT LOT longer than that to get it to the consistency I wanted. I also cooked it over a several day period (because I was going to/from the hospital daily). I also chopped it up with a food processor.
Drain luau thoroughly; stir in coconut milk, salt and chicken or squid.
Heat, do not boil.
Makes six servings.

How to Make Hawaiian Style BBQ Teriyaki Chicken
Nothing beats a good BBQed Teriyaki fresh from the grill with a side of rice and mac salad. Brought to Hawaii from Japan, this recipe has been adopted by the islanders. Teriyaki is most commonly marinated with chicken thighs and beef.
Ingredients:
2-3 lbs skinless and boneless chicken thighs
Base Teriyaki Sauce:
1 ½ cups shoyu (soy sauce)
1 cup sugar
Optional additions:
1 tsp grated ginger
2 cloves grated garlic
2 tbsp sesame oil
2 tbsp lightly grounded sesame seeds
1 tsp ajinomoto (MSG)
2 stalks of green onions

EASY INSTANT POT LUAU STEW | Keeping It Relle
This recipe for luau stew is made quick and easy in the Instant pot. Say what? What used to take hours to make can now be made in just about 45 minutes.
Juicy, tender beef chunks with vibrant green luau leaves pressure cooked in a beef broth come together in this classic Hawaiian dish. Growing up in Hawai’i meant always having this yummy meal at family gatherings.

Ingredients:
1 pound luau (taro) leaves
1 1/2 pounds beef stew meat
4 slices ginger
Hawaiian salt to taste
1 teaspoon Better Than Bouillon Beef Base
1 cup water
Directions:
Set Instant Pot to saute mode.
Trim off stems and thick veins from luau (taro) leaves. Rinse leaves well. Roll up leaves and cut into strips.
To the Instant Pot add beef, ginger, Hawaiian salt, Better Than Bouillon Beef Base, and water. Then add luau leaves. Place lid on Instant Pot and set valve to sealing. Turn off saute mode. Cook on manual high pressure for 25 minutes. Allow natural pressure release for 10 minutes, then quick release the remainder of the pressure.
